Tropical Sunshine Sourdough Pancakes

As you might know, I’m also celebrating #RecipeMakeover this week (enter the giveaway!) with healthy makeovers of some of our favorite recipes, so this is gonna be a double-linkup type of day! I’ve been working with Barleans this year to create recipes, and they’re one of the sponsors for this event as well!

Since the appearance of Mossy #2 (my sourdough starter) in my life, I usually have an excess of flour in my apartment to feed him. In the past, I’ve made Sourdough Pancakes with Raspberry Coulis and Turkey Sausage Mushroom Pizza with Sourdough Crust, and…I’m back again with another sourdough pancake recipe!

Tropical Sunshine Sourdough Pancakes

You'll Need...

  • 2 cups sourdough starter, room temperature
  • 2 tbsp sugar
  • 1-2 eggs
  • 4 tbsp EVOO
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1 tsp warm water
  • (Topping)
  • Summer Sunshine Jam (orange/peach/pineapple jam, or your choice of jam)
  • 1 tbsp Barleans Digestive Blend mix (or to taste)

Directions

  1. In a large bowl, add sourdough starter, sugar, egg(s), olive oil, and salt. Mix well, then set aside.
  2. In a small bowl, dilute 1 tsp baking soda in 1 tbsp of warm water and set aside until ready to start making your pancakes*.
  3. When ready to cook your pancakes, fold the water/baking soda mixture into the pancake batter gently (do not beat!). Let the mixture bubble/foam for 1-2 minutes before using.
  4. Heat a lightly greased cast-iron skillet until fairly hot, then pour 1/4-1/2 cup sourdough pancake batter onto the griddle.
  5. Cook pancakes for 1-2 minutes on each side or until golden-brown + bubbly.
  6. Remove from heat and top with jam + Barleans Digestive Blend!

Additional Notes

*If you want melt-in-your-mouth pancakes, make sure you only add the baking soda/water mixture right before you start to cook the pancakes! The skillet needs to be already hot so that the sourdough will be cooked while the air is still working in the batter!

  7. These sound delicious. Do you have a special pancake batter that you use? I don’t see where the batter is made. Is the sourdough starter the batter? I have never worked with a starter before so please forgive my ignorance.

    1. Your question definitely isn’t ignorant! The sourdough starter is the batter–I unfortunately don’t have a recipe on my blog for one because I received mine from a friend, but if you want to try making your own, King Arthur Flour has a good recipe over here: http://www.kingarthurflour.com/recipes/sourdough-starter-recipe :]!
