5 Ingredient Tangerine Pancakes

I feel like I come up with recipes in spells (or maybe just write recipe posts in spells?). Aside from the Maple Roasted Pears in Balsamic VinegarĀ from Friday, I have a breakfast recipe for you today–5 ingredient Tangerine Pancakes!

This recipe is super simple (like most of the things I come up with, because time is an ever-dwindling thing in life), and as the title implies, only takes 5 ingredients to make!

Two of the ingredients are from the company I blog forBarleans! The Hooty Fruity Tangerine Omega Pals has both omega-3’s (500mg Omega-3 EPA & DHA in each serving, to be exact) and Lutemax 2020! Omega-3s play an important role in development, especially in the retina and the brain. Lutein (best thought of as an “eye vitamin”) and is best absorbed in a high fat meal.

I spend an exorbitant amount of time in front of computers (hello, EMRs…), and I’ve been trying to pay more attention to my eye health lately after getting LASIK earlier this year (one of my best investments ever–it’s a whole new world out there! :O ). I also try to pay attention to my cholesterol since hyperlipidemia runs in my family, so I was happy to find a tasty supplement that kinda addressed both!

The Hooty Fruity Tangerine Omega Pals is true to its name in that it definitely tastes like tangerine; it blends well into oatmeal, smoothies, yogurt, and is delicious even on its own. (I decided to add it into pancakes though to switch things up! :] ) It’s also non-GMO, gluten-free, sugar-free, and dairy free, and made with Barlean’s ultra-purified Fresh Catch fish oil.

(Please keep in mind to use low heat to cook these pancakes! The oil isn’t meant to be heated past 225 degrees Fahrenheit.)

You'll Need...

  • 1 1/2 cups pancake mix
  • 2 cups milk
  • 2-3 tbsp Barleans Hooty Fruity Tangerine Fish Oil + Eye Nutrition
  • 1/4 cup Barleans Super Seed Blend
  • 2 eggs
  • nut butters/fresh fruits (optional), for topping

Directions

  1. Mix together ingredients into a large bowl and beat the eggs in until smooth.
  2. Heat a nonstick skillet on LOW heat.
  3. Ladle ~1/4 cup batter onto the skillet and cook for 2-3 minutes, or until bottom is a golden color, then flip and cook for ~1 minute on the other side.
  4. Top with nut butter and/or fresh fruit, if desired.

This is pictured topped only with a pat of butter, but if you wanna be fancy, you can also top it with nut butters and/or fresh fruit (or even an extra drizzle of the Omega Pals)!

    I don’t really eat pancakes, but when I do, it’s with butter and good quality maple syrup. Sometimes, I’m a purist and prefer things simple. If I’m really splurging, nutella and strawberries do the trick.

  12. I had lasik probably 10 years ago and I agree with you, it’s the best!!! Wish I had done it sooner! I take fish oil capsules – have never tried putting them in food before but that’s a good idea for how to sneak it into my son’s diet! very clever

    1. Tis a good way to go! I’m super glad I finally got it done too! *-* I definitely like the “sneaking!” I wouldn’t be able to do the fish oil capsules (can’t swallow em’ ._.), but this (+ the other flavors) are so good in smoothies/oatmeal/on their own, it definitely makes it easier! :]
