Curry Freekeh Bowl

I’ve been really absent from being online lately, partly because I’ve been super busy, and also because the internet decided to die on me.

But I’m back! And guess who finally made a facebook page!? (Yep, that’d be me.) It’s in those awkward beginning stages of I-never-actually-promoted-it-anywhere, so if you feel so inclined, follow me! <3

Once upon a time, I used to volunteer as a science camp counselor, and one of the things we really liked to stress was minimizing waste/our carbon footprints (the “leave no trace” philosophy). I’d often pack my kids apples and other healthy snacks to bring along on our hiking expeditions.

So what to do with the apple core?

(To join, you just commit to eating the apple cores.) This has apparently mystified many a random observer. :O I’m driving to Maryland this weekend and staying at a friend’s place–he says one of his most vivid memories of me is still when he saw me standing out in the hallway eating an apple during a break in organic chemistry lab. (I don’t remember this, but it definitely sounds like me.)

An easy way to eat that apple core is to start eating the apple from the bottom. About halfway through, you’ll see a star!

You can finish off the whole thing (butĀ don’t bite the seeds!).Ā Apple seeds contain amygdalin, which is a glycoside toxin that combines with a GI enzyme and can produce hydrogen cyanide, which would not be a happy time. If you just swallow them, you’ll be fine!

With all that talk on apples, I don’t actually have a [new] apple recipe for you today because I’m apparently a tease. I’m running a giveaway though, and you could win some super-delicous noms! (More details at the end of this post!)

Now that I’ve finished up my usual tangent for the week, onward to my curry freekeh bowl recipe! I first found out about the existence of freekeh (it’s so fun to say! :DĀ ) when I got my hands on the cookbook, Simply Ancient Grains (see my review here!), and have been wanting to try it ever since!

It just so happened that Freekeh Foods partnered up with Fit Approach, and I got to try to make something cool with it! :]

This recipe is super, super easy to make, because I happen to adore throw-everything-in-and-go recipes. :] I had a slight mishap with some crazy-spicy curry paste, so that is the reason for the addition of the mango (not pictured, because it was a random accidental discovery and I ate it all), or the tomatoes + eggs. :] This makes 4 tasty servings! :D

Curry Freekeh Bowl

Ingredients:

  • 1 cup of freekeh (Tamari flavor)
  • 1 1/2 cups vegetable broth
  • 2 tbsp curry paste
  • 1 bag frozen vegetables (I used broccoli + cauliflower)
  • (Optional) mango (chopped) or tomatoes (chopped), or 1-2 eggs (scrambled)

Instructions:

  1. Empty 1 cup of freekeh, vegetable broth, and 1 cup of water into a saucepan and bring to a boil.
  2. Add curry paste and frozen veggies, then cover, reduce heat, and simmer 20-25 minutes, or until desired tenderness is reached.
  3. Top with veggies (or fruit) of your choice! :D

  1. Actually, my favorite curry recipe, which I’ve adapted over the years to make vegan, has apples in it. They work really well with the curry spices.

  7. I used to juice apples all the time with veggies and one day accidentally I discovered the apple star. I was like “Woah! too cool”

  13. I haven’t cooked with curry for the longest time because kids wouldn’t eat it and I didn’t want to cook two meals. But I should give it a try again. Their taste changes all the time.

    1. hehehe, kids can be really picky, but they do have a tendency to change their mind a lottt. :P Maybe they’ll like it now! :D

    I have never tried freekeh before – and have searched for it at the grocery store to no avail many times! I’d love just a plain flavor, or the curry flavor…you can’t go wrong with curry!

    1. Curry is lovely! :D They don’t have an actual curry flavor (something to consider though… <3), but if you have curry paste/powder and the original, you'd be good to go! :]
