Cranberry Almond Breakfast Cookies

And what better recipe to fit this theme than a dessert for breakfast/brunch recipe!? :O As you may [or may not?] know, I’m a Barleans blogger, so challenge #2 was to create something tasty for brunch!

I have a weakness for sushi and breakfast/brunch foods. Although I’m an equal-opportunity Team Sweet + Team Savory, I do have a tendency to gravitate towards the dessert table at brunch buffets (there’s one nearby that has all kinds of cakes, brownies, muffins, cheesecakes, cookies, and even cannolis!). Not gonna lie, that dessert table was kinda my inspiration for these, but I figured I’d make em’ healthier. ;P (Muffin tried to eat these.)

The superfruit blend has ground flaxseed, unsweetened shredded coconut, and strawberry, raspberry + blueberry powders in it! Each serving (2tbsp) contains 5g fat, 3g carbohydrates (3g dietary fiber), and 2g protein!

I’ve been adding it to my protein smoothies as well as my yogurt + oatmeal. My friend and I also made muffins with em’ the other day–they gave it a nice texture/crunch! :]

You'll Need...

  • 1 1/4 cups rolled oats
  • 1 1/4 cups oat flour*
  • 1/2 tsp baking powder
  • 1/4 cup + 1 tbsp Barleans Culinary Coconut Oil
  • 1/4 cup Barleans Superfruit Blend
  • sprinkle of sea salt
  • 1 overripe banana
  • 1/2 cup applesauce
  • 2 eggs, beaten
  • 1/4 cup dried cranberries
  • 1/4 cup sliced almonds

Directions

  1. Preheat oven to 350.
  2. In a large bowl, add oats, oat flour, Barleans superfruit blend, baking powder + salt and whisk to combine. Make a well inthe center of the dry ingredients and add the coconut oil, applesauce, mashed banana + eggs and mix to combine. Add cranberries + almonds and mix until evenly distributed throughout the dough, then chill the dough for ~5-10 minutes.
  3. Divide the dough into 8-10 equal portions and place them on a silicone baking mat or prepared baking sheet.
  4. Bake for ~15 minutes.

Additional Notes

*I ground my rolled oats into my own oat flour, but this can technically be store-bought too if you don't feel like doing that.
These can be frozen, but make sure you thaw em' first before eating! The super ripe banana made these sweet enough for me, but if you like sweeter cookies, you can add honey, maple syrup, or eat these with jam (with or without nut butter)! :]
