Slow Cooker Chocolate Jackfruit Pumpkin Chili

Welcome to Foodie Friday! I’ll be linking up with Annmarie from the Fit Foodie Mama + Esther from Chocolate Runner Girl! This week’s theme is Choctoberfest! Since it’s right around soup/chili season, I decided to make a vegan slow cooker Chocolate Jackfruit Pumpkin Chili! :]

A lot of people only think about sweets when it comes to chocolate, but did you know that it can be used in savory recipes as well? Forte Chocolates has developed a line of Gusto bars to embrace the motto, “Celebrate Life Through Chocolate!”

As you probably know by now, I’m a fan of recipes that are super easy and quick, so slow cooker recipes are right up my alley! A couple years back in med school, we had a chili cook-off and my friend gave me her chocolate chili recipe, so I figured I’d do a vegan variation of it! I received free product in exchange for recipe development, but as per usual, all thoughts/opinions are mine and mine alone!

If you don’t feel like sauteeing the onions and garlic beforehand, you could theoretically just throw everything into the slow cooker and be done with it. I really like that this it’s so easy to make a huge batch of this (yay for meal prep!), so if you happen to be looking for a good vegan + vegetarian recipe, this would be a good choice! (I’ve been topping my baked potatoes with em’, and I bet this would be good with cornbread! I should try making some…)

I decided to use the Forte 64% Dark Bar for this chili–it gives it a this chili a sweet and savory twist! The Aztec Soul bar (Chili Pepper in Dark Chocolate) would probably work super well with this recipe too!

Slow Cooker Chocolate Jackfruit Pumpkin Chili

Looking for a hearty and healthy vegan/vegetarian chili recipe for the fall? This Chocolate Jackfruit Pumpkin Chili has a sweet and savory twist and can easily be made in a slow cooker!

You'll Need...

  • drizzle of extra virgin olive oil
  • 1 onion, diced
  • 4-6 garlic cloves, minced
  • 1 tbsp cumin
  • 2 tsp oregano
  • 2 tbsp chili powder
  • 2-3 tsp freshly ground black pepper
  • 1.5 oz
  • 1 14.5 oz can diced tomatoes
  • 1 28oz can pumpkin puree
  • 2 8oz cans jackfruit
  • 1 12oz can tomato paste
  • 1.5 oz Forte 64% Dark Bar, chopped
  • sprinkle of sea salt
  • sprinkle of hemp seeds

Directions

  1. Drizzle EVOO in a pan on medium-high heat and sautee onion and garlic for 3-4 minutes.
  2. Add all ingredients into slow cooker and let cook on high for 4 hours.
  3. Top with sprinkle of hemp seeds before serving.

    1. It’s a fruit that grows in southeast Asia. :] I’ve been seeing it a lot in vegan recipes as a substitute for meat! :] Thanks so much for stopping by to check it out! :D

    1. Yes indeed!

      Jackfruit is a tropical fruit mostly found in southeast Asia (but can be found, usually canned, in Asian supermarkets here!). I only tried it recently since I’d seen it popping up a lot as a vegan alternative to meat-based dishes. In my culinary medicine lecture, they used it to make a pulled “pork” type dish and it was really good, so I figured I’d try using it too!

  12. I usually add a little sugar to my chili to offset some of the acidity from t he tomatoes..I never thought of doing chocolate!

  15. I like all the dark, smoky flavors in chili (I think it might be a bit much for other people, lol) – chocolate, chipotle, coffee…but my “secret” ingredient is a little bit of molasses!
