Apple Butter Pulled Chicken Crisps

Guess who’s been published!?

(Aside from writing articles with my friends for FM Student, I also got picked up as a student writer for The DO,Ā which is a monthly online magazine published by the American Osteopathic Association!)

Also, my first residency interview is this upcoming Tuesday, so I double-checked with my preceptor at my current rotationĀ to make sure it’d be okay if I disappeared for 1.5 days since it’s in another state.

W: No, you have to stay here for the entire week.

My reaction.

Alright, fine. I’m kidding. I may or may not have done a sad puppy-dog-eyes sort of dealĀ though.

W: …I’m just kidding. Go ahead. You’re not going to have any problems at your interview.
F: :OĀ Thanks!! You really think so?
W: Of course! Think about it. What are they looking for?
F: I’m just worried that I’ll get pimpedĀ with obscure medical questions that I don’t know how to answer. :[
W: I doubt they will. By this point, they already know your gradesĀ and yourĀ test scores. They know that you’re an excellent student, which you are.
F: (He just told me I was an excellent student. :O…)
W: I’ve never been on the admissions committee for a residency program, but I was on the state medical board andĀ managed a large practice firm, and I hire people here. If I were hiring, I’d want someone who was personable and friendly, easy to get along with, polite, someone who worked well with others as part of a team and who’d be willing to work hard…youĀ are definitely all of those things.
F:Ā (…:O You flatter me, good sir!)
W: Are grades and scores important? Yes, but would I want the top student if I knew he’d just be going out and getting drunk every night or if he didn’t work well with others? Absolutely not. You’re going to be just fine.

(His staff told me on day 1 that he was very much a tell-it-like-it-is sort of guy, soĀ I was super super flattered. :]!!! That was soĀ nice of him!)

Onward to today’s recipe!

Apple Butter Pulled Chicken Crisps

Ingredients:

  • 1 cupĀ apple Ā butter
  • 1 tbsp soy sauce
  • 2-3 cloves garlic, minced
  • 1 pound boneless, skinless chicken breasts
  • 1/4 red onion, minced
  • shredded carrots
  • tortilla chips

Instructions:

  1. Combine apple butter, soy sauce, and garlicĀ into your slow cooker.. Mix well, then add the chicken breasts, turning so they are coated with the sauce.
  2. Cover and cook on high for 4 hours. Use the back of a wooden spoon to gently shred the chicken. Stir so that the shredded chicken is evenly coated with the sauce. Set slow cooker to warm and let chicken stand for 15 minutes to soak up the sauce.
  3. Mix chicken with red onions and serve on tortilla chips. Top with shredded carrots!
