Slow Cooker Baked Potatoes

I thought I’d be too busy to come up with a recipe for this week since I’m back on hospital service through this and next week and, well, there’s rarely ever time to twiddle my thumbs while I’m on service.

I’m on the day team as a senior resident for the first time, so it’s going to be interesting trying to balance letting my intern learn and do the work required while still providing enough support and not making her feel like she has to do everything. I’m all for teamwork and splitting everything up for maximum efficiency, but I’m supposed to loosen the reins so that she gets a chance to learn to do this all too so she’ll be ready for next year.

Case in point: I hope I don’t suck as a senior.

In any case, I happened to find photos of these slow cooker baked potatoes that I made a while back but forgot to write a recipe for, so hooray hooray! :]

Slow Cooker Baked Potatoes

Prep: Cook: Yield: 4Total:

You'll Need...

  • 4 potatoes
  • sprinkle of sea salt
  • EVOO

Directions

  1. Stab the potatoes with a fork several times, then rub with extra virgin olive oil, sprinkle with salt, and wrap tightly in aluminum foil.
  2. Cook on high for 4-5 hours or low for 7.5-8 hours.
  3. Add your choice of toppings (e.g. chicken salad).

Additional Notes

You can top this with anything your heart desires, but chicken salad is one of the quickest protein-filled toppings I could think of, so I chose to use that!

    Mmm…this looks good. I think my mom would love it; she’s a bit baked potato fan. I like them at times but I don’t put much on them. haha

    1. Thanks! I appreciate it! The first few days were awesome-sauce and everything went to crap yesterday, but we managed! She’s fantastic, so it’s made hospital service a whole lot more enjoyable than it would be otherwise! :]!

      haha, I’m a huge baked potato fan (I tend to crave some form of potatoes the most probably out of any other type of snack! :P ).

  2. I have not tried to fix baked potatoes this way, but I will for sure. Plus any recipe that starts with stabbing has to be a good one! I suck at stepping back and letting someone else take over, but it is important to letting others learn!

  3. Love this idea. We had a luncheon at work once which was a baked potato bar and all the potatoes were made in the slow cooker.

  11. Looks yummy! My husband loves when I make buffalo chicken stuffed sweet potatoes. I definitely need to get my crock-pot out and use it more…I seriously use it like once a year!

  13. I love baked potatoes, but usually “cheat” and cook them in the microwave. I have never thought of using a slow cooker! My favorite toppings are cheddar cheese and sour cream, but my go-to quick lunch is pepperoni and mozz cheese.

    Slow cookers are THE BEST. At this point though I’m trying to use my oven as often as possible because it’s freezing in my apartment, but if I were not….slow cooker all the way!
