One Pot Creamy Hummus Pasta with Vegetables

It’s been a while since I’ve cooked since I’ve unfortunately been super busy, but I’mĀ finally back with another recipe! I think I’ve mentioned before that I tend to go vegetarian/meat-less whenever I’m feeling a little poor and/or low on fiber.

I received free samples of Sabra mentioned in this post. By posting this recipe I am entering a recipe contest sponsored by Sabra and am eligible to win prizes associated with the contest. I was not compensated for my time.

I needed to dream up a quick + easy meal that I could make in bulk to cover me for at least several meals for the rest of the week. My mind went back to several years ago when I tested out “huminara” sauce but I was out of pasta sauce, so this recipe was born! :]

Hummus is awesome in all kinds of things–sandwiches, salads, snacks (chips & dip! *-*)…it’s also a great plant-based source of protein! Something I especially love about Sabra hummus is that there are so many different flavors to choose from!

  • BBQ Hummus with Jackfruit and Smoked Paprika
  • Caramelized Onion
  • Classic
  • Jalapeno
  • Olive Tapenade
  • Roasted Garlic
  • Roasted Pine Nut
  • Roasted Red Pepper
  • Spinach & Artichoke
  • Sun Dried Tomato with Italian Herbs (the star of today’s recipe!)
  • Supremely Spicy
  • Taco Inspired
  • Organic Simply Roasted Garlic
  • Organic Simply Roasted Red
  • Organic Traditional

What what?! Where do I even begin!? (I’ve tried 8 of these so far…) It was kinda hard to choose which hummus to make this pasta with, but I highly doubt you could go wrong with any of em’. :O I used Modern Table’s lentil penne pasta for some extra protein goodness!

One Pot Creamy Hummus Pasta with Vegetables

Prep: Cook: Yield: 6-8 servingsTotal:

You'll Need...

  • 8oz lentil penne (or your choice of pasta)
  • 1 8oz package of frozen mixed vegetables
  • 1 cup Sabra Sundried Tomato Hummus
  • 1-2 tsp paprika
  • 1 tbsp crushed red pepper flakes

Directions

  1. Bring 2 cups of water to a boil and add frozen vegetables. Bring to a second boil, reduce heat, and then cover + cook gently for ~8 minutes (do not overcook!).
  2. Set vegetables aside and bring a large pot of water to a boil. Cook the pasta according to package directions (~10min, or until tender).
  3. Drain the pasta.*
  4. Place empty pot on the stove over medium heat and add vegetables, hummus + pasta back into the pot.
  5. If the sauce consistency is not where you'd like it to be, pour in the reserved pasta water in increments until the sauce reaches your desired consistency.
  6. Serve hot!

Additional Notes

*Consider reserving ~1 cup of pasta water if you'd like to change up the consistency of the pasta sauce!

  2. I make my own “Pizza Hummus” all the time and mix it with pasta. Its so creamy! I love how this is 10X quicker and easier then making it from scratch! Perfect for busy schedules. I think I would want to try the roasted pine nut flavor, but really they all sound good!

  5. omg don’t even get me started. I’m a total hummus FREAK. We don’t have all the flavors here yet, but I noticed when I was in Boston how many varieties there are to choose from. I’ll be on the lookout anyway here in NL.

    I have definitely added sabra hummus to “non-traditional” things. In fact sometimes I literally just put a blob of it on top of my salad! YUM.

  20. THis is easy, healthy and delicious. AND it looks soooo good. I wish for a bowl right now. Sun dried tomatoes are so flavorful. I absolutely love it.

  23. Oh how I love hummus šŸ˜ Sabra hummus (weirdly called Obela here – but itā€™s the same which I was so happy about because I always bought Sabra in the US!) is my favourite store bought hummus as itā€™s so creamy and delicious.

    I love adding hummus to pasta dishes – and adding nutritional yeast to the mix too is sooooo good!
