Spicy Zoodles with Tofu

I know I’m late to the spiralizing party, but here’s a fun fact(?): I’ve actually owned a spiralizer since early 2015.

The reason behind your never actually seeing spiralized veggies on this blog is mainly because I spent the better part of the rest of that year (and this one) moving all over the country.

My spiralizer sat patiently under my night table at Please Save A Cat until I finally situated myself at the apartment I’m in now! (Bring on the kitchen contraptions!)

This recipe was really borne out of super laziness on a Sunday afternoon. I’d had a crazy Saturday that included going to the gym (I finally have one again!!), Pokemon Go-ing through the city, reorganizing my kitchen, lots of food prep (9 jars of overnight oats, 4 lunches containing chicken with veggies, a batch of hardboiled eggs), and driving off to New Gretna to perform at a luau that I’d looked over/somewhat learned all the dances (all 9 of em’) to…the night before.

 


The audience apparently really liked me though, and no one could tell that I’d never danced with the group/known the songs before, so hooray hooray for the fake it til you make it mentality!

All this backstory is just to illustrate the fact that I was pretty exhausted by Sunday, so I wanted to fix up something quick + nutritious before going on my way to…run more errands and get more stuff done. (It never ends!)

Ever since moving into my apartment here, I’ve been playing a game with myself that basically consists of using up all the stuff in my apartment without needing to go out and buy anything (other than to replenish fresh fruits/veggies). It helps to save a lot of money!

Spicy Zoodles with Tofu

Ingredients:

  • drizzle of EVOO
  • 1 zucchini, spiralized
  • 1 12-oz. block tofu, cut into bite-sized rectangles
  • 1/4 red onion, diced
  • crushed red pepper, to taste
  • sprinkle of sea salt
  • sprinkle of ground black pepper
  • drizzle of oyster sauce (or soy sauce)
  • drizzle of sriracha (optional; not pictured!)

Instructions:

  1. Heat a skillet on medium-high and add in some extra virgin olive oil.
  2. Add red onion and tofu. Let cook for 2-4 minutes, stirring gently.
  3. Add in zucchini, sea salt, and oyster sauce. Let cook for another 3-5 minutes, stirring occasionally.
  4. Transfer to a bowl and top with crushed red pepper, black pepper, and sriracha (if using).
  5. Serve hot!

  3. I’m glad you’ve whipped out your spiralizer to share such a fun recipe! My favorite part of your recipe is that you described measurements as a “drizzle” of this and that, ha. It allows for you to make it your own.

    A few weeks ago, I was on a sprializing kick. However, it is really a pain to wash and dry…. so when I do break it out, it stays out on our counter for a long time.

      My spiralizer is definitely still sitting on the kitchen table right now! I’m planning on just spiralizing everything in bulk tomorrow! :P

  9. This looks delicious! Which spiralizer do you have? Has it been pretty durable?

    I keep meaning to buy one, but the online reviews make it sound like every brand sucks/breaks and then I don’t buy one…do you like the one you have?

    1. Thanks! :D The spiralizer I got is the Paderno World Cuisine 4-blade (https://www.amazon.com/Paderno-World-Cuisine-Spiralizer-4-Blade/dp/B00AW3B5MM) and I like it a lot! They had a demo one out that I got to try using before I got coerced into buying it, but it’s actually pretty simple to clean (that was one of my biggest concerns initially). I just haven’t used it much because I was moving all over the country for a while. :P Now that I’m more or less in one space most of the time, I’m hoping to definitely get more use out of it!

    in italy right now, there’s this restaurant that has this awesome vegan spiralized zoodle dish, with a tofu- almond sauce/”pesto” and parm topping. i get it all the time!!
