Plum Almond Toast

Obtaining not-so-pricey fresh fruit is sometimes an issue around here, so my household (of one) has a whole lot of dried fruit. I rarely ever have dried plums on hand though, so when the California Dried Plum Board challenged Recipe ReDux members to use them in our cooking to kick off National Osteoporosis Month, it gave me the perfect opportunity to experiment!

  • Since dried plums are naturally sweet, they can serve as a substitute for sweeteners to reduce calories while boosting flavor.
  • Prune purĆ©e works well as a replacement for butter or oil as a fat source!
  • One serving (4ā€“5 dried plums) is less than 100 calories. Additionally, each serving provides 3 g of fiber (and is considered a good source of fiber), 293 mg of potassium, 16 mg of magnesium and more vitamin K than any other fresh or dried fruit.
  • Emerging research shows that eating dried plums may have positive effects on bone health. Previous studies discovered that eating 100 grams (two servings; about 8- 10 dried plums) of dried plums for one year was associated with increased bone mineral density (BMD) and improved indices of bone turnover in postmenopausal women.

Not gonna lie–I originally had a couple different recipes planned, but a combination of me not reading the contest rules carefully enough coupled with my surgery rotation + shelf exam got in the way, so instead, you’re gonna get this super-simple (but still absolutely delicious) recipe today! The other recipes will likely pop up later this year. ._.

I’m putting a spin on the traditional PB&J, which is quite likely one of the easiest recipes on the planet! You’d probably have to seriously try to be able to mess it up. I haven’t actually had jam in years, and I’m a little peanut-buttered out at the moment, so I decided to switch it up by using dried fruit as my “jam” and almond better to replace my usual go-to!

This recipe serves two! If you like things to be on the sweeter side of the spectrum, feel free to add a drizzle of maple syrup, but I think the dried plums make em’ plenty sweet enough!

5-Ingredient Plum Almond Toast

plumalmondtoastIngredients:

  • 2 slices whole wheat bread
  • 9-10 California Dried Plums, diced or sliced
  • 2-4 tbsp almond butter
  • 1/4 cup walnuts, chopped
  • sprinkle of unsweetened coconut flakes
  • drizzle of maple syrup (optional)

Instructions:

  1. Toast slices of bread.
  2. If using maple syrup, mix with almond butter and spread onto bread slices.
  3. Top with dried plum, walnuts and coconut flakes.
  4. Serve warm!

  1. I really enjoy using dates as a substitute sweetener for recipes, but I had never thought about using prune puree. Sounds like a good idea to me. I think prunes are underestimated in the dried fruit world.

    1. I have a whole bunch of dates (yay Costco!) that I need to use up to make stuff, and they really are such a great sweetener!

      Prunes definitely get underestimated–I was surprised at how much I liked this! :] (It was very much a “how will this turn out if I throw in all these ingredients I need to use up?” sort of kitchen experiment!)

  2. fareah this is my kind of recipe. I haven’t used jam in quite a while either but love all the dried fruit. I often put almond butter on dried figs and eat it just like that. Bet it would be just as good with plums!!

    1. I’m too cheap to buy jam and they’re usually overladen with sugar, so definitely agreed–they’re such a great substitute! :]

  11. I’ve started to use dates as a white sugar substitute, but have never considered using prunes! Maybe it brings back memories of my dad having me eat 5 every day for my digestive system haha.

    1. hahaha, I haven’t used prunes for anything in ages (…or ever?)! I think I had traumatic experiences in 2nd grade when my parents made me drink prune juice (…). But dried prunes are lovely (as are dates)!

  14. For the longest time, I used to be so scarred to try plums/prunes – but I love how sweet and moist they are – Farrah, I also always though toast was boring – at least till i saw your creation – you have such a wonderful array of flavors and textures going on on a simple slice of toast! yum!

  17. Is it weird that I love prunes…maybe haha. I never thought to put them on toast. We have quite a bit of dried fruit too. Sometimes it’s easier to buy them than fresh fruit, depending on the season.
