Thai Coconut Curry Noodle Soup

I unfortunately do not have a Chinese recipe for you because my friend and I decided to make something else instead, but here are some that I’ve made previously!?

It’s awesome to have a cooking buddy again! My friend’s housemates moved out and left a bunch of food and I’m forever on my kitchen/pantry cleanout crusade, so we’ve been getting together 1-2 times a month to meal prep and it’s given way to lots of tasty creations!

We actually used to cook together wayyy back when (aka my grad school days–for instance, this Blueberry Cheesecake + Malaysian-style Egg Over Rice, and these Chicken & Mushroom Dumplings!), so it’s kinda cool how life worked out! :P

We had a couple days of amazing weather but it decided to go back to being cold and rainy, so what better way to warm up than with this Thai Coconut Curry Noodle Soup!? I love how easy this was to make! *-*

This is actually a copycat recipe of an amazing Thai Coconut Curry Noodle Soup that I had back in November at a restaurant in Somerville–it was our celebratory “return to civilization meal” after we went hiking up by Buttermilk Falls and unfortunately got caught in the rain. :O At least we got to see the waterfall though?!

Thai Coconut Curry Noodle Soup

Yield: 9 servings

You'll Need...

  • 2 tbsp coconut oil
  • 7-8 garlic cloves, chopped
  • 2" fresh ginger, grated
  • 1/2 cup Thai yellow curry paste
  • 2 cans coconut milk
  • 2 potatoes, cubed
  • 18 oz. dried dried rice vermicelli noodles
  • 4 chicken bouillon cubes
  • 10 cups water
  • (Topping)
  • fresh cilantro, to taste
  • fried onions, to taste
  • egg, hardboiled + halved
  • meatballs*

Directions

  1. Add coconut oil, garlic, ginger, and curry paste to a large pot and fry for 3-5 minutes over medium heat.
  2. Add the coconut milk, potatoes, chicken bouillon cubes, and water, and bring to a boil. Add salt if desired.
  3. Pour the soup over 1/4 cup (~1 handful) of dried vermicelli noodles.
  4. Top with fresh cilantro, fried onions, egg + meatballs and serve hot!

Additional Notes

*We used the recipe for the Pistachio Crusted Meatballs we made a couple weeks ago, but instead of using basil + oregano, we threw in minced garlic and fresh ginger and left out the pistachios!
**If you're making this for meal prep, store the soup and the noodles in separate containers so they don't get soggy!

  2. This is a totally new and different kind of soup from anything I have ever eaten. The coconut is different from anything I have ever had in a soup. Will see how my family enjoy it.

  7. I’ve been sick for the past week or so and I’m also trying to lose a little weight before summer, but I’m dying for a hearty soup and your Thai Coconut Curry Noodle Soup fits the bill. I wish I had a cooking buddy, that would be so much fun. Wow Buttermilk Farms is beautiful. I love when you take us along on your hikes.

    1. Aww, me and you both! I’m trying to fight off a cold(?/the flu?) and being wildly unsuccessful, which sucks because yay for working 24-hr shifts when sick. :'( Sigh, haha.

  19. That waterfall picture looks lovely! Too bad that you got caught in the rain, especially if you didn’t have rain gear with you. That’s awesome that you were able to recreate that soup! I had some AMAZING soups in Ecuador that I’ve been meaning to try to recreate, but just haven’t had the chance to do so. Hopefully one day though!

  20. Where do you find yellow curry paste? I can find green and red curry paste and that’s it!

    1. I got some at my local Asian market, but you can also get it on Amazon! (The brand I used was Mae Ploy!)
