Maple Pecan Peanut Butter Energy Bites

It’s been a while since I’ve made any sort of energy bites, so I figured now would be a good time to change that up! :] (Be sure to check out some of my past energy bite/ball recipes–my cake batter one was a definite crowd favorite!)

Maple Pecan Peanut Butter Energy Bites | @fairyburger

LunchBots has a variety of options for your meal prep needs, including bento containers (like the one I got!), leak-proof containers, insulated containers, and lunch bags! The containers are made of food-grade 18/8 stainless steal with no linings, toxins, BPA or phthalates. :] (It fits perfectly into my Isolator meal prep bag too!)

Thanks to the joy that is higher education and student loans, I’m in more than a quarter of a million dollars of student debt, so I try to save money wherever and whenever possible.

One of the easiest ways to do that is to pack your own lunch! (This also tends to be healthier, since you can control what it is you’re putting together for a meal/snack!)

The Barleans’ Energy Blend contains ground flaxseed, unsweetened shredded coconut, chia seeds, and panax ginseng–as you’re probably aware by now, I very rarely drink coffee, but I do have lots of ginseng and tea in my apartment that I consume in usually-sparing amounts. Ginseng works super well for keeping me alive/awake through long shifts!

Maple Pecan Peanut Butter Energy Bites

Prep: Yield: 16-18Total:

You'll Need...

  • 1 cup rolled oats
  • 2 scoops Barleans Chocolate Silk Greens
  • 1/2 cup Barleans energy blend
  • 1/2 cup peanut butter
  • 1/3 cup maple syrup
  • 1 tsp vanilla extract
  • 1/4 cup pecans, crushed/roughly chopped

Directions

  1. Combine all ingredients together and form into 1" balls.
  2. Serve!*

Additional Notes

*If not consuming right away, store in airtight container in the fridge!

    My favorite healthy snack is an apple with peanut butter, or if I’m good about meal prep a bite like this one! I love peanut butter snacks!

  10. Those look so yummy and super easy to make! I work 12 hour shifts and always try to bring some sort of health snacks in case I get the munchies. My work drawer is full of nuts and Kind bars, and I always pack fresh fruit and protein shakes for the day.

    For me it is hummus. My littlest eats it by the spoonful (healthy fat right!). But I also like to make homemade lara bars. My oldest and husbands favorite is when I make carrot cake ones.

    1. Homemade Lara bars sound awesome–I love the carrot cake flavor!! :D I’ve also been meaning to try making my own hummus but haven’t quite gotten around to it yet. x_x
