Apricot Plum Energy Bites

Today’s theme = Dried Fruit!Ā This is partially becauseĀ I forgot to read the instructions for a recipe contest earlier this year and had made something else…so why waste a recipe?!

Here’s what I’d been planning on entering! :O

Long long ago, I made 3-Ingredient Energy Bars (more like bites), and last May, Linda gave me a bag of Apricot Coconut Bites that she found at a Cost Plus World Market while she was out in California. (We take turns visiting our home state, so it seems.)

They were all sorts of delicious, so I decided to try to revisit that old energy bar recipe + semi-recreate her supermarket find with dried plums! I actually like dried plums a whole lot more than I do the fresh fruit (which is somewhat rare for me)–I just never seem to have luck with finding fresh plums with the perfect amount sweet and tart!

Stick em’ in an ice tray for easy portioning/chillin’!

I have a lot of dried fruit + nuts to use up, as well as what I like to call “fixings” (hemp hearts, chia seeds, etc.), so this recipe worked out well with my let’s-clean-out-my-pantry endeavors! Bonus points for it being portable, which is really helpful when I’m constantly on the run (I jest) move.

This recipe makes two dozen! They’re not quite as coconut-y as my inspiration, but they come pretty darn close!

Apricot Plum Energy Bites

Course: Snack
Cuisine: American

Servings: 24 bites

Ingredients

  • 1 cup dried apricots
  • 9-10 dried plums
  • 1 cup walnuts
  • 3 tbsp hemp hearts
  • 1/2 cup unsweetened coconut flakes

Instructions

  • Combine all ingredients in a high-speed blender or food processor.
  • Blend/pulse until ingredients are finely diced and start to stick together.
  • Roll into little balls and place in ice tray to chill!

  • Since I packed so many activities in, I had to make a “part 2!” :] We went to a park + I took my second aerial lyra/hoop class ever! (The first one I took was back in early 2012, haha.)

  4. Wow, these sound really good. I am all for cleaning out the pantry and letting nothing go to waste. Also, I am quite picky when it comes to plums too! I was the fruit to be deliciously sweet but the skin to be tart. :)

    I have tried to make healthy treats with little bits of this and that. I love this idea, sounds delish, and the ice cube tray is a great idea!
