Vietnamese Avocado Shake (Sinh To Bo)

Welcome toĀ FoodieĀ Friday! I’m back today with yet another less-than-5-ingredient recipe! This Vietnamese Avocado Shake (also known as Sinh To Bo) is suuuper easy to make , requires only 3 ingredients, and I even made it vegan!

If you know me well, you’ve probably heard of my dreams of one day having a backyard with a forest of avocado trees. (I’ve decided to tone it down/be more realistic and would be happy with even just 1-2 trees though.)

So it may not come as a surprise to you that one of my favorite drinks of all time also includes avocado! (Although milk tea would be a very close second…) If I were to get even more specific, it’d be the Smashed Coconut Avocado dessert drink (Bo Dam Dua) from a restaurant in San Jose (CheeseCups!)

This is reminiscent of the avocado portion of that dessert drink! :] You can definitely add ice as a 4th ingredient (~2-4 cubes) if you want it to be super cold but I grew up rarely/never using ice, so here we are.

I typically use a sweetened condensed coconut milk that I found at my local Lucky’s, but you can use regular sweetened condensed milk if you’d like! You can also use whatever milk you’d prefer but we happened to only have coconut milk at home (+ I love coconut, so it was the obvious choice!).

Vietnamese Avocado Shake (Sinh Tį»‘ BĘ”)

Ingredients

  • 1 avocado
  • 1/2 cup coconut milk unsweetened
  • 2 tbsp sweetened condensed coconut milk*

Instructions

  • Scoop the avocado flesh into a blender and add the coconut milk + condensed coconut milk.
  • Blend to your desired consistency.
  • Serve chilled!

Notes

*You can also use regular sweetened condensed milk if you want. Some people do a combination of sweetened condensed milk with sugar, but it's really all to taste.

    1. Yay! I hope you like it! It’s not quiteee as healthy as it could be since it’s sweetened condensed milk, but if you use less of that and more of the coconut milk, it’ll have less sugar + be full of healthy fats!
