Ultimate Coffee Date: May 2025

Welcome to May’s Ultimate Coffee Date! I’m still in Ireland right now + on the tail end of my trip…and I don’t wanna leave yet! It’s so pretty here and I feel like there’s still so much more to explore. :( Apologies though if the spacing/photos are wayyy off though; the app doesn’t seem to wanna work smoothly..

Ultimate Coffee Date: May 2025

One of my favorite moments on one of our hikes! The deer was trying to get me to feed it and I was telling it that (a) I can’t feed it and (b) I really didn’t have any food. 😅

If we were having coffee/tea today, I’d tell you that…I keep saying I’m going to start up Travel Tuesday again, maybe this year will be the year I actually go back to it (maybe even the cooking part too?! I can’t believe this used to mostly be a food blog 😭)…

If we were having coffee/tea today, I’d tell you that…I’ve had more fish n chips over the past 2 weeks than I usually have in an entire year (or 2 years?!). Granted, they’ve all been really tasty because they do it so well here, but I’m also looking forward to non-pub food soon too, hehe.

If we were having coffee/tea today, I’d tell you that…there was a super cool yarn store in Cork where I may or may not have gone to townnnn on. (Everything was so pretty! 😅) I guess I’m gonna be relearning how to knit + hopefully also finishing a crochet project at some point this year!

Look at their yarn wall!!!

  2. Oh, all that yarn! Definitely a great reason to get back to knitting!
Change of subject, I actually had fish -n-chips last weekend on my trip (but I wasn’t in Ireland, LOL).

    1. Hopefully I’ll have relearned how to knit/crochet by the end of this year! (That’s my current hopefully-semi-realistic goal!? :D…)

    1. I learned how to knit in 2012 but unfortunately forgot how, so this is motivation-to-self to relearn! :P

  11. I hope you had a wonderful time in Ireland! Those are all beautiful colors. I can’t wait to see what you end up making with it.

    1. I’m excited! :D Will def have to relearn how to do things on less high-quality yarn before I break these out, hehehe.
