Ultimate Coffee Date: February 2026

Happy February + welcome to another Ultimate Coffee Date! I just came back from Thailand on Sunday and feel like I’ve had a super whirlwind week at work (I stayed til 9pm on Wednesday :’) + will be leaving tomorrow for a weekend conference, so life has been a tad hectic, hehe.

Ultimate Coffee Date: February 2026

So many fishies!!!
If we were having coffee/tea today, I’d tell you that…Thailand was a dream. It went by so too quickly! So much good food to be had, beautiful beaches, and 5 days of diving in the Similan Islands. <3 I had a whirlwind day in Bangkok eating street food all over the city with my brother + we headed off to Phuket the following day. On land, we mostly ate, walked on the beach, and checked out different shops + got massages.

We did a couple land tours as well that brought us to a bunch of different places + we got to go kayaking, snorkeling, swimming, and hiking! Liveaboard life was basically wake up, eat a snack, dive, eat breakfast, dive, eat lunch + take a nap, dive, eat a snack + take another nap, dive, eat dinner, and sleeping again (+ in my case, reading a bunch of books)! Ultimate Coffee Date: February 2026 I spent the first night sleeping on the sundeck under the stars being gently rocked to sleep, which sounds glorious until I woke up to being violently seasick the day (+ a half) afterward.

I only managed to do 3 dives the first 2 days due to feeling like death (nausea/vomiting/headache). Thankfully, I eventually got used to it (was cured by some mango with sticky rice, aka my favorite dessert!) after doubling up on scopolamine patches and dramamine, but the first day was definitely the worst.

Prior to this, I’d never dived in warm water, and now that I have, I’m not sure I can ever go back! It was so nice not to have to wrestle myself into a 7mm wetsuit + wear a thick hood/gloves (honestly that was a workout all on its own, haha). I got to see so many different types of fish + also sharks, turtles, octopi, crabs, and stingrays! One of these days, I’ll get around to updating my instagram, but here’s one of the fishies + nudibranch we saw!

  3. Your trip to Thailand sounds amazing! How cool that you got to scuba dive in warm water for the first time while there, but I’m so sorry that you got seasick and had a couple of rough days. My aunt’s family lived in Thailand for a couple of years in the early 70’s and this year one of my cousins went back to visit again with his family. They had a wonderful time!

    To answer your questions: We’re traveling now – spending a little over two weeks in Florida. Our summer trip will be to go to the Pacific Northwest. I don’t care for Thai food, but my husband loves it! My 2026 fitness goals are to continue doing what I do while maintaining my current fitness level.

    I’m so sorry you got sick but it looks like you really made the most of it!

    Thai food isn’t my favorite, but I’ll try pretty much anything! In fact, I have a yelp event at a thai restaurant next week, and I plan to go with their recommendations!

    1. Aside from that day and a half, the rest of the trip was glorious! (+ what I remember of those 1.5 days were still nice! Just not as pleasant as they could’ve been, hehe.)

      It’s the besttt! I wish it wasn’t so expensive here!

    1. Thank you! I’ve never had any photos of me diving so that was extra exciting, hehe. Thankfully the pluses of the trip greatly, greatly outweighed the seasickness! :]

  8. What an cool trip! Sorry to hear you were sick for some of it.

    I have never been to Thailand. The only travel plans I have this year are a few trips back to visit my family (where I grew up).

    My favorite dessert are Italian pastries especially a Napoleon. I also love ice cream, cupcakes, and cookies. I’m a sweets and carbs girl but I love veggies and fruits too.

    I have a health goal to lose weight but because I have chronic hip and pain back, my movement/fitness is extremely limited.

      Oo, Italian pastries…I have a soft spot for cannolis! (Have not had one in a while, but <3. I love carbs too, but do love veggies/fruits as well, although I do need to do better about actually incorporating enough of em' in my regular day.)

      I'm sorry to hear on the chronic pain; that definitely makes things more difficult, but I hope your health goal still goes well. <3

      Thanks for actually giving me feedback on the timing of it! I'm not sure why changing it made sense to me late last year but whatever reasoning I had is a goner at this point, hehe.
