Sriracha Wasabi Pastrami Sandwich

Welcome to our weekly Foodie Friday link up! I’m linking up with Annmarie from the Fit Foodie Mama, Esther from Chocolate Runner Girl + Jess from Hello To Fit to create awesome healthy recipes each week! This week’s theme = Spice It Up!

If you’re a fan of spicy, you’ve come to the right place! This recipe was another of our (me/Linda) creations from when I went to visit in September!

We wanted a quick lunch to keep us full til dinnertime so we could get as much stuff done in between as possible, so we raided the fridge for potential ingredients to throw together and came up with this lovely goodness!

Hermie really wanted a taste, but we couldn’t let him. :O

This definitely hit the spot! I haven’t made a sandwich and shared it on here since…uh, 2014(?!), when I made a Chicken Pesto Sandwich and Greek Yogurt Chicken Salad Sandwich with Hira (one of my med school buddies)!

I suppose it’s time to change that, since they’re so quick and easy to make, and I’ve been all for quick and simple lately, even more so than when I was in med school!

Prep: Yield: 2Total:

You'll Need...

  • 4 slices Olde Chicago rye bread
  • 6 slices pastrami
  • wasabi mustard (to taste)
  • sriracha (to taste)
  • 1/2 avocado, sliced
  • 2 small tomatoes, sliced
  • 1/3 cup spinach
  • 1/8 red onion, sliced
  • 1-2 tsp jalapenos, diced (optional)
  • sour cream (optional + to taste)

Directions

  1. Spread sriracha on half the slices of bread and wasabi mustard on the others.
  2. Layer in the spinach, pastrami, avocados, tomato, red onions, and jalapenos.
  3. Add a small dollop of sour cream (if using).
  4. Cut in half and serve!

Additional Notes

Any type of rye bread would work for this recipe!
If you're not a fan of that sort of spiciness, just decrease the amount of sriracha/wasabi mustard that you use (or use sour cream to help temper it)!
