Greek Yogurt Chicken Salad Sandwich

Whenever possible, Hira and I try to get together on Saturdays to cook up several batches of a bunch of different dishes so that we’ll have food for the week. It helps immensely to have another person to do this with.

  • Our kitchens double.
  • Prep time for everything gets halved.
  • It keeps me motivated, because at times, I’m way too lazy to cook something awesome just because I don’t feel like investing so much effort into it when I know the only person I’m feeding is myself.
  • Also, she has pretty plates and I do not. :O

Both of us adore food and are trying to save money by using up everything in our kitchens/pantries before buying anything new. This is also an awesome setup because we’re usually completely exhausted by the time we get home from “work.” (In quotation marks because we’re not being paid; clinical rotations make up our 3rd/4th years for school.)

For our first gathering (a couple weekends ago), we made huge batches of 5 different dishes in under 1.5 hours. :D! I was pretty proud of us. :O This sandwich is one of the things we made (loosely adapted from here)!

Greek Yogurt Chicken Salad Sandwich

Ingredients:
-2 6 oz. cans shredded chicken
-1 apple, diced
-1/3 cup dried cranberries
-1/4 cup sliced almonds
-1/2 cup Fage 0% Greek yogurt
-1 tbsp lemon juice
-garlic powder, to taste
-freshly ground black pepper, to taste
-sea salt, to taste
-4 slices whole wheat bread

Instructions:
1) Combine everything (except the bread) in a large bowl and mix!
2) Serve on bread!

It’s going to take me a longer time to put up the popcorn recipe because we demolished it before I even thought to snap a picture. Oops. :x

This is similar to one of my chicken salad recipes, though SO much healthier than mine since you use greek yogurt and I use mayo. lol I will def have to try your recipe because as much as I love my recipe, I don’t indulge often because it’s so NOT healthy with all of that mayo. I’d love to have it more often!

    1. I hope you like it! :D I never have mayo on hand (unless I’ve preemptively permanently borrowed some packets from work, har har), so I tend to use Greek yogurt to sub in for anything that calls for it. :D
