Slow Cooker Protein Oatmeal

My slow cooker is one of my favorite cooking gadgets–when you have a crazy schedule, it’s really nice to be able to throw everything into a contraption and revisit it later to have a full-on meal ready to go!

Back when I was in college, I used to start every morning off with a bowl of oatmeal. I’m not entirely sure why I stopped, but I’ve been meaning to get back into it since it’s so easy and versatile! It’s great as breakfast, as a snack…really just any meal of the day. (If you’ve never had savory oatmeal, you should try that too!)

As you may well know, I’m likely going to be moving back across the country later on this year, so I’m doubling down on trying to finish off as much stuff as I possibly can so I’ll have less to drag back with me. Things that I have in excess include…protein powder and oatmeal. (Thus this recipe is born!)

Slow Cooker Protein Oatmeal

Cranberry Pistachio Protein Oats

You'll Need...

  • 1 cup steel cut oats
  • 1 scoop vanilla protein powder
  • 1/2 cup dried cranberries
  • 1 tbsp honey/maple syrup
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1 pinch salt
  • 1 1/2 - 2 cups vanilla soy milk
  • (Toppings)
  • diced pistachios
  • ground cinnamon
  • flaxseed
  • hemp seeds

Directions

  1. Combine ingredients and stir to mix. Pour into slow cooker and cook on low heat for 6-8 hours.
  2. Add desired toppings and serve hot!

Additional Notes

There may be a thin dark-colored "skin"/film and the oats might look slightly dry--just give it a good stir and it should be fine!
If you like your oats on the runnier side, add another 1/2 cup of milk.

    Oatmeal is my favorite breakfast. I love the addition of cinnamon and pistachios and hemp seeds. So healthy and so nutritious.

  9. I love oatmeal but don’t eat it as often as I used to. I tend to eat it a lot when I travel since I am out somewhere for breakfast and it always seems to be on the menu.

  10. I used to make oats in the slow cooker, but then I got hooked on my baked oatmeal recipe – it’s the one weekly food prep I do religiously. Is it odd that I thought of you while we were watching the Rutgers lacrosse game on tv? Wish I got to meet you while you were on the east coast.
