Mixed Vegetable Soup

Libby’s Fruits & Vegetables are a time-saving solution to creating healthy meals despite super-packed schedules! I decided to make a mixed vegetable soup using em’!

These microwaveable and shelf-stable pouches come in 5 different varieties: sliced carrots, sweet peas, cut green beans, mixed vegetables and sweet corn.

I still had lots of vegetables left after making the Spiced & Stuffed Samosa Baked Potatoes, and it’s been pretty darn cold here lately (much to my despair), so I figured a hot soup would be perfect!

This is another soup-er (heh heh) quick recipe that takes less than 10 minutes! My hours, although self-induced, haven’t gotten any better. I worked 43.5 hours in 3 shifts over Tuesday through Thursday of last week and another 15-hour shift on Sunday/Monday. One of the nurses made me go home on Monday morning and threatened to drive me back if I didn’t go right away, haha.

On the flip side, I’m learning a lot (which is why I’ve been forgoing sleep in the first place), so I really can’t complain. Knowing that I can have a delicious and healthy soup ready in under 10 minutes when I get home gives me something to look forward to. :] That definitely doesn’t hurt!

Mixed Vegetable Soup

Mixed Vegetable Soup

Ingredients

  • 2 cans diced tomatoes
  • 1 can tomato sauce
  • 1 tbsp minced garlic
  • freshly ground black pepper to taste
  • pinch of sea salt
  • 2/3 cup Libby’s Sweet Peas Vegetable Pouch
  • 2/3 cup Libby’s Corn Vegetable Pouch
  • 2/3 cup Libby’s Green Beans Vegetable Pouch
  • 1 1/2 tsp balsamic vinegar
  • 2 tsp dried basil
  • 1 tsp brown sugar
  • 1 tsp cayenne pepper

Instructions

  • Combine all ingredients into a large pot. Cover and keep heat on high for 8-10 minutes, stirring periodically. (If you don't have already-minced garlic, mince that while all other ingredients are heating up, and add it to the pot when you're done chopping!)
  • Serve hot!

    1. For sure! I’m not very patient when it comes to waiting for food (especially when I’m hungry :[ ), so when everything’s pretty much already made and all it needs is to be heated up, it’s rather awesome! :]
