This week’s theme is Savory Breakfast!

Before I get to that, a quick life update of sorts–I’m having a world of trouble getting my rotations finalized. I sent in the paperwork for one of them back in March. March! It is still under legal review, and the program is going to have to cancel my rotation if it’s not approved by…today. (Since said rotation starts on the 28th of this month.) But the legal department isn’t looking at it til today, so who knows what’s going to happen. :[

I’m trying to stay positive, but not gonna lie, I’m pretty bummed since I was really looking forward to that rotation (and also already paid for the cross-country plane tickets…). The program said that if worse comes to worse, they can potentially open up a 2-week slot in November for me to rotate there (they’ve been super super nice through this whole frustrating process!), so I just hope things work out for the best!

I mentioned last week that there was a chance that my North Carolina rotation would get saved…and it did! They put their rotation on VSAS so that I could apply for it! So rest assured, not everything is falling to pieces–there’s still hope for me to have an actual schedule this year! :]

Alright, so back to the matter at hand–this is a super tasty and easy way to start off your morning–you can pop em’ in the oven while you get ready! (Just don’t forget about them, although the delicious smell coming from your kitchen should serve as a handy reminder!)

Unless, of course, you happen to be like me in that you value your sleep and are ready to race out the door 10-15 minutes after waking up. In that case, I’d leave this for a weekend! :]

Breakfast In A Cup

Ingredients:

  • 6 slices whole wheat bread, crusts removed
  • 6 eggs
  • 6 strips turkey bacon
  • shredded mozzarella, to taste
  • freshly ground black pepper, to taste
  • smoked paprika, to taste

Instructions:

  1. Preheat oven to 350 F.
  2. Press bread slices into baking cups + coil a strip of turkey bacon within the bread slice. Add cheese as desired.
  3. Slowly + carefully crack the egg into the center, then bake for 10-15 miinutes, or until egg reaches your desired level of done-ness.
  4. Season with pepper + paprika, and serve hot!

  8. Farrah this looks SO delicious! I make something similar (strata) but it’s a huge serving, and not great for to go (also a bit more time consuming as you need to let the egg soak through the bread for hours and hours)

    This would be perfect to prep in the mornings while I’m getting ready for work and then eat on the go! Love it

    I usually do a variant with bell peppers and skip on the bread. Pretty tasty with a bit of cheese sprinkled on, too.

    I just made a gluten-free breakfast casserole today that was a great hit with everyone. It’s not easy to find savory breakfast ideas that are universally liked.

    I was trying the other day to find your link with the foodie friday themes and I couldn’t. The last time I looked you had the themes through the end of September. Did you come up with more? Do you mind to give it to me again, please!
