Chocolate Chip Walnut Breakfast Cookies

I don’t tend to make cookies all that often, mostly because I live alone and would likely eat the entire batch in one sitting. (sigh) These could probably also be called compost cookies because as per usual, I was trying to use up a whole ton of ingredients. :O

I got the black + orange chocolate chips back in early December because they were on super-sale (after Halloween + Thanksgiving had ended), and my mom had also sent me a giant 3-lb. Costco bag of walnuts somewhere last year that I’m still working through.

I also picked up Nature’s Path cornflakes a while ago and never got around to eating it (although they did make their debut in my Peanut Butter Cornflake No-Bakes!). Needless to say, I had to come up with excuses to use all this stuff up. :O The gluten-free flour was obtained from my friend (thanks, Monika! <3), because she gave me a bunch of edible substances when she was moving out at the end of second year.

I can’t exactly say I’m done using up any of them, but at least I made a little dent, right?!

These don’t exactly have the consistency of cookies, and almost look like super un-fancy meringues. (They taste nothing like meringues.). If anything, they’re more like cake cookies, but yay being relatively healthy cake-cookies?

We made these during our leftover potluck last month, and I would have them with tea in the mornings before (or during) didactics. :D

The recipe doesn’t exactly yield the prettiest cookies ever, but they’re rather tasty, and only take call for 5 ingredients! (Yayyy! :D ) The yield really depends on your size preference for cookies, but it made approximately 20 cookies for us!

Chocolate Chip Walnut Breakfast Cookies

chocolatechipwalnutbreakfastcookiesIngredients:

  • 2 cups gluten-free all-purpose flour (I used Glutino)
  • 1/2 cup sugar
  • 1/4 cup Earth Balance (or butter, if not vegan)
  • 1/2 cup walnuts, chopped
  • 1/3 cup chocolate chips
  • 1/2 – 3/4 cup cornflakes (I used Nature’s Path)

Instructions:

  1. Preheat oven to 400.
  2. Melt butter + add all ingredients into a bowl and mix until well-combined.
  3. Bake for 15-20 minutes or until they pass the toothpick test.

  8. They sound delicious, I’m intrigued by how they stay together with all the dry ingredients and I thought maybe you melted the white chocolate but it just melts and they form in the oven? With the walnuts and cornflakes they sound so full or texture and flavor! I don’t have any cornflakes or I would whip these up today as it is raining. May have to run and grab some!

  14. I read “cookies” and “breakfast” and had to come see what this is all about. I think they turned out looking just fine. I’d eat ’em, that’s for sure!
