Truffle Pesto Poached Egg Toast

I feel like I haven’t posted a new recipe in ages (probably because I haven’t), but hopefully that will change soon-ish? It’s crunch time for studying and trying to juggle that between work and replacing my lost driver’s license/passport (…) and having some semblance of a life (kindasorta) has been rough. I feel like I’m constantly leading some sort of a double life! :P

You’ll have to forgive how simple this is, but yay for quick and easy snacks/breakfasts?! There’s all kinds of toast out there these days–avocado toast, sweet potato toast…I figured I’d go with it and make something with things I already had lying around in my apartment. Hooray for 5 ingredients + under recipes!

When I was moving out of Please Save A Cat last year (it’s hard to believe it was only a little over a year ago!?), Linda gave me a Nordic Ware 2-Cavity Egg Poacher (not an affiliate link) that I recently re-discovered in my cabinets, so I figured I’d give it a try! Tis a game-changer. I know poaching eggs isn’t all that difficult, but this makes it even easier!

I also had some pesto left that I got from The French Farm during #CookoutWeek, so I figured I’d put that to good use as well!

Truffle Pesto Poached Egg Toast

Ingredients

  • 1 slice whole wheat bread
  • 1 tbsp La Favorita Pesto Genovese with Truffles
  • 2 eggs poached
  • sprinkle of desired spices*

Instructions

  • Toast the bread in a toaster and spread pesto in an even layer on one side.

Nordic Ware Egg Poacher method

  • If you have a Nordic Ware Egg Poacher, crack the eggs in, stab the yolks with a fork and add 1 tsp of water to each. Then close the lid and microwave for 45-60 seconds!

"Legit" Egg Poaching Method

  • Heat up a pan with steadily simmering water and crack an egg into the pan. Let cook for ~3 minutes and remove with a spoon.
  • Top the toast with the poached eggs and sprinkle with spices.
  • Serve hot!

Notes

*I used a "bruschetta mix" that consists of salt, black pepper, garlic powder + chili pepper!

  8. ahhh you lost your license/passport! noooo! good luck getting that sorted out eek! and this looks delish, I’ll go for plain ‘ole pesto because truffles make me gag ;) but this looks so so good! & i love how you use ingredients from the pantry

      Plain ol’ pesto is amazing too! :D! I’m trying to avoid food waste + use everything up in my apartment! :P

  13. I love eating truffles, I was obsessed with this super tasty truffle salt until they discontinued it. So this truffle pesto poached egg toast is right up my alley. Good luck on studying, I’m so proud of you :) I would love to try this nori ware egg poacher. My poached eggs never turn out right.
