Tropical Walnut Cookies

You can use a food dehydrator, a low slow oven, or natural sunshine to preserve natural healthfulness. I managed to obtain a dehydrator for $20 with the help of several guys we trained to dance for a fundraiser event earlier this year. (Just to make life more interesting, we mashed up Miley Cyrus and Ke$sha; the audience loved it.) Sadly, I haven’t ventured past making apple chips and banana taffy/chips, so I’m really glad this theme came up! :]

My mom sent me a 6-lb. bag of walnuts earlier this year because they’re “good for my brain,” which, yes, they are, but I had another 3 lbs that I was already working on, so I’ve been trying to find excuses to use em’. Here’s one!

I could not wait the 12 hours I’d arbitrarily chosen as the timeframe for them to finish dehydrating because it was making my entire apartment smell so darn delicious…so I popped one out at about 4 hours and demolished it in a couple seconds. :] These are best served warm, and if you don’t have a dehydrator, I’m fairly convinced that you can bake these for ~8-10 minutes at 350 for similar-ish results.

Tropical Walnut Cookies

Ingredients:

  • 1 cup dried mangoes
  • 1 cup unsweetened, shredded coconut
  • 10 pitted dates (soaked for 2 hours)
  • 2 cups walnuts (soaked overnight)

Instructions:

  1. Blend dates with ~1/2 cup water (can use the water that you soaked them in!), coconut, walnuts and dried mangoes.
  2. Spoon out “dough” into bite-size pieces onto wax paper and lay flat onto the dehydrator trays.
  3. Dehydrate for ~12 hours. Flip them over when the dough has firmed up.
  4. Serve warm!

    1. I have a huge stash of em’ (I just unearthed another 6 pounds o_o my mom may or may not be a hoarder, haha), so this was a good way to use some of em’ up! :D

  2. I don’t own a dehydrator but if I did I would definitely try this out! I love walnuts and have a bunch in my cupboard. Maybe I will try your baking modification and see what happens :)
