Thai Salmon Curry with Vegetables

I am unfortunately not following the theme this week because I’m trying to post some of my backlogged recipes before I never end up posting em’ again. :/ I do have a number of awesome frozen treats in my archives though, so here are some of my favorites!

This recipe for Thai Salmon Curry actually came into being because Hamidah and I had been planning on hiking Breakneck Ridge. Unfortunately for us, it decided to pour the day we’d planned to go, so we ended up making this, going rock climbing, and watching Guardians of the Galaxy instead (good thing we have so much to catch up on!)!

Thai Salmon Curry with Vegetables

Ingredients:

  • 1 lb salmon fillets
  • 1 14 oz can light coconut milk (unsweetened)
  • 2-3 tbsp curry paste
  • 1 bell pepper, sliced
  • 2-3 small carrots, chopped
  • 2-3 tbsp fresh cilantro, chopped
  • 2 tbsp fresh basil, chopped
  • 1 tbsp fresh ginger, grated
  • freshly ground black pepper, to taste
  • 3  cups  steamed rice

Instructions:

  1. Cut the salmon into bite-sized pieces.
  2. Add coconut milk, ginger and curry paste into a large sauté pan and stir to combine/blend until smooth.
  3. Bring the coconut milk mixture to a boil and then add the salmon.
  4. Cook, turning the salmon gently to cook all sides (~5-7min). Add the vegetables halfway through.
  5. Sprinkle in the basil and cilantro.
  6. Season with pepper, to taste.
  7. Serve over rice!

  1. This sounds so quick, easy and delicious! I love using lite coconut milk in my recipes, and never thought to do a salmon curry!

    1. Agreed! This was the first time I ever made fish curry but I think it’s gonna have to happen more often! *-*

  2. This sounds delicious! I don’t eat or make a lot of curry but this looks so creamy and good. I love your use of salmon , I have never had a curry with salmon.

  3. yum! how many servings is this Farrah? just trying to work out how to make (alter a bit) for Weight Watchers…

    my favorite curry is a dahl that my husband makes. I love lentils but this dahl is nice and spicy and the finishing touch is garlic, dried hot peppers and curry leaves fried for a few seconds in super hot oil. SO GOOD. I could eat it every day.

    1. I would say abouttt 6 servings or so! (I may or may not have finished it all in the course of a day though..)

      Dahl is so good! I’ve never tried making it but I really need to soon! *-*

  4. Oh, I can’t wait to try this. We are eating salmon every week and while I love the simplicity of broiling and serving with roasted veggies, we are ready for something different!

  14. I LOVE curry and I don’t eat chicken so this is a great substitute. It’s too bad my husband hates the smell of curry – I never get to make it at home!
