Spiced & Stuffed Samosa “Baked” Potatoes

I’m working with the Recipe ReDux and Libby’s Fruits & Vegetables to promote the creation of healthy meals despite super-packed schedules! When you’re a medical student, saving time is always a blessing, because there’s always so much to be done!

These microwaveable and shelf-stable pouches come in 5 different varieties: sliced carrots, sweet peas, cut green beans, mixed vegetables and sweet corn. They’re particularly applicable right now because I’m currently in the middle of my ER rotation, so time is of the essence here, as each shift is ~12 hours, and my schedule is kinda all over the place. Sleep is currently a grand luxury.

Libby’s Fruits & Vegetables is challenging Recipe ReDux members to create a delicious appetizer, soup, salad, or side dish in 10 minutes or less, which is perfect, because I adore quick and simple recipes! This vegetarian and vegan appetizer takes less than 10 minutes and only uses a total of 7 simple and healthy ingredients! All you need is a microwave!

The Venice Kitchen Silicone Baking Cups (Amazon affiliate link) I used make it easier when you’re re-stuffing the potatoes, and it makes for a much nicer presentation when serving, but you could always cut the ends of the potatoes and sit them on a plate!

Using Libby’s Sliced Carrots would add a really nice pop of color to this, as would just using their Mixed Vegetables pouch on its own! Libby’s Vegetable Pouches can be found at select Walmarts this fall, but they’ll be available nationwide by January!

Spiced & Stuffed Samosa “Baked” Potatoes

Ingredients:

  • 3 small potatoes
  • 1/4 cup Libby’s Sweet Peas Vegetable Pouch
  • 1/4 cup Libby’s Corn Vegetable Pouch
  • 1/4 cup Libby’s Green Beans Vegetable Pouch
  • 1 tsp Hungarian smoked paprika
  • 1 tsp mild curry powder
  • 1 tsp ground ginger

Instructions:

  1. Stab potatoes a few times on each side and microwave for 3 minutes.
  2. Cut the potatoes in half and place them brown-side down into a silicone baking cup. (If you want it to sit better, you can cut the end off the brown side so it’ll lay flat in the cup!) Microwave them for another 2.5 minutes.
  3. Stab a fork into the middle of each potato and turn it a couple times to hollow out the center. Make sure you don’t hollow out the whole thing so that it’ll be able to support the contents! Spoon the contents into a bowl.
  4. Microwave Libby’s Sweet Peas Vegetable Pouch and Libby’s Corn Vegetable Pouch for 45 seconds each (separately!). Add 1/4 cup of sweet peas, corn and green beans (without the liquid!) into the bowl.
  5. Add the smoked paprika, curry powder and ground ginger. Mix and spoon the contents back into the potato skins.
  6. Microwave for 30 seconds and serve hot!
