4-Ingredient Moroccan Red Lentil Soup

Welcome toĀ FoodieĀ Friday!Ā I’ll be linking up with Annmarie from theĀ Fit Foodie MamaĀ + Esther fromĀ Chocolate Runner Girl–this week’s theme = Souper Soups!Ā I realized while I was making my 2018 Foodie Friday Roundup that I never made any soup last year (…), we’re gonna change that with this week’s theme and with this 4-Ingredient Moroccan Red Lentil Soup!

As a member of the New Hope Blogger Co-Op, I get a quarterly “Blogger Box” filled with all kinds of different natural products from a bunch of different companies!Ā As always, thoughts + opinions are mine + mine alone!

I recently ran out of my Costco container of extra virgin olive oil (I bought it back when I started med school), so getting this new jar of EVOO was perfect timing!

Origin 846 has a unique decanting process that removes almost all the particles while still keeping its polyphenol + antioxidant benefits! It’s packaged in a dark glass bottle to keep it safe from UV rays. I’m definitely looking forward to making other things with it!

Healthy Gourmet Kitchen is a company started by Mary Song–inspired when she couldn’t find pantry staples without added sugars, preservatives, salt, and other unnecessary ingredients. She makes soup starters + seasoning mixes for people who are too busy to cook or not too confident in the kitchen yet!

My sample from New Hope unfortunately didn’t come with instructions + there weren’t any online. However, I dropped a comment on her instagram and she responded super quick, so here it is! :] I added some cooked pasta to it to make it extra filling–this is absolutely perfect for the cold weather we’ve been having!

I also recently got a 3-in-1 thermal bag/portable slow cooker from Hungry Fan. You can use it to slow cook your food without needing to plug it in to anything! As such, it’s perfect for potlucks, get-togethers with friends, game day…you name it! You can also use it to just keep your food (or drinks) hot or cold for several hours! :]

Please excuse the wrinkled-ness! In retrospect, letting it unrumple a bit might have been a good idea…

4-Ingredient Moroccan Red Lentil Soup

Ingredients

  • 1/2 onion chopped
  • 2 tbsp Origin 846 Unfiltered Extra Virgin Olive Oil
  • 5 cups broth vegetable, chicken, bone, etc.
  • 1 6 oz package of Moroccan Red Lentil Soup
  • 1/4 - 1/2 cup Rao's artisan bowtie pasta optional

Instructions

  • In a small saucepan, saute the onions in the olive oil over medium heat.
  • Add broth + contents of the soup package and bring to a boil, then reduce heat to a low simmer for 30 minutes.
  • Blend or puree with an immersion blender.
  • Serve hot!

    my favorite soup is a lentil carrot curry soup that I make from time to time! I LOVE it!

  9. OMG we go through those Costco jugs of olive oil about once every 2 months! My husband loves to cook and he is always using olive oil for something. I rarely make home-made soup but with winter upon us, I’m going to start looking at some new recipes. Thanks for sharing!

  10. Hold up. Can we talk about this Hungry Fan item? Explain. Do I need one?

    1. Disclaimer in the sense that I haven’t used it as a slow cooker yet, but the idea is that you basically just start cooking the dish at home and then throw it into the bag and it’ll keep slow cooking it!

      I used it to keep my pot of soup warm, which it did for a good number of hours (I’ll have to time it next time), and it’s also good for keeping things cool. I’m planning on taking it camping with me so I can test it out some more–it’d be a total game changer for car camping! :O
