Favorite Summer Salad + Life on the Farm

Coincidentally, last week’s Foodie Friday theme was Portable Picnic, and I just so happened to make a rather delicious Asian Slaw for it (back in May–I may or may not be psychic, haw haw haw)!

Alright, is everyone back?

I figured I’d do a mid-month life update/check-in with everyone. How’s life going? Do you get to actually have a summer? Any travels or fun things planned? (Let me know, so I can live vicariously through you!)

I’m currently knee-deep in the middle of…

  • Studying for boards (10 days left! Ahhhh!!!)
  • Applying to residency programs (which will probably end up costing more than the deposit I just got back from my apartment; this will likely manifest itself into another post later)
  • Attempting to finalize my 4th-year schedule (the joy of phone calls, voicemails, temperamental printers, emails, and paperwork!)

I won’t take you through a complete “Day In The Life” today because let’s face it, the “Studying For Boards” edition really isn’t all that exciting. I sit at my desk and study/go through DIT/do practice questions all day, interspersed with answering emails/friends’ questions on the application process, filling out more paperwork, fielding other phone calls, and playing Refrigerator Tetris.

This is what happened when I first moved back in. Yay for stuffing 2 refrigerators into 1!

Every once in a while, I venture outside my room to grab some food. Lately, my favorite study snacks have been Peanut Milk Toast and whole wheat bread with almond butter and nutella. (We’ll not talk about the time it fell off my plate and landed face-down on the carpet, dashing my tastebuds’ hopes and dreams into a million places, and giving my arm another workout after the epic fridge-cleanse I’d just done. :[ )

Thankfully, Linda and I share a love for delicious food, and since she refuses to let me pay rent, I make up for this by sharing all delicious grocery finds (3 avocados, 3 mangos, and a giant sack of potatoes for $2.97!!!) and my blogging food opportunity treasures with her, so that we both get to enjoy delicious noms.

My friend asked me how I managed to get the egg to look so perfect, and…it’s actually because I was so excited about it that I took a bite before I got a picture of it (cardinal food blogger sin, I know), so I put it back down and snapped a picture before devouring it.

I am sad that I haven’t stepped foot into a gym in what feels like (and probably has been eons). But sometimes in life, you need to prioritize, and at present, this exam is the basis of my life. My study breaks consist of a bunch of bodyweight exercises. (What you can, when you can!)

And of course, what would life be without my adorable foster kitty?! She’s been keeping me company through all my hours of studying. <3

Plus, despite the daily thunderstorms that have been threatening to drown our valiantly-trying-to-survive boysenberry bush, we’ve been getting some beautiful WV sunsets that my phone camera can’t capture perfectly.

  2. Our fridge is exactly the opposite of yours. With neither Alex nor I having really been here at all over the past few weeks we are down to frozen veggies and eggs!

  4. Asian Slaw looks delightful! I love your Campbell’s soup mug — my maiden name is Campbell and I grew up in a home with TONS of Campbell’s Americana! Also, I envy your fridge! Living in the UK now, my fridge is the size of a plate cupboard, so even when we fill it it’s still so pitiful! Hope your studying is going well …I want to squeeze your fluffy cat. SO cute!

  7. THat salad looks great…I am a huge fan of Asian slaw. Can’t wait to check it out. YAY! And, fridge tetris, that is funny and totes legit.

    Great job fitting in those bodyweight exercises during breaks. So many biz leaders I listen to talk about taking breaks from work and doing physical exercise. It helps our brains. Though, I am sure you already knew that!

    I had “Type B” playing in my head as soon as you said refrigerator Tetris. I guess life is happening. Nothing too big is happening, nothing terrible has been going on, and nothing exciting, either. Trying to take my own advice I give to my consumers about applying for jobs on days off, but that’s about it really. Been showing my roommate Borderlands 2 and also Silent Hill games. You should take your cat on photo adventures when you do decide to go out.

    1. Sometimes, uneventfulness is good! I definitely would prefer that to drama or catastrophic things happening! Good luck with all the job applications!

      I totally would, but she’s grown accustomed to her freedom to romp around my room lately, and has gotten superrrr antisocial. D:

  13. That slaw sounds so refreshing and perfect for the summer! My favourite summer salad involves anything that is cool, crispy, crunchy, and refreshing. Summer has been good so far, with the exception of super humid weather up here… Good luck studying and applying to those programs1

    Right now you’re going through a stressful time, but eventually it will pass and you will get your chance to enjoy life! Heck, you’ll be making the big bucks so you can really enjoy life:)
    I have several friends who went the medical route, in fact two finished their residency’s about a year ago and were finally able to move back home to set up their practices where they wanted. One became as surgeon, and he’s the only house call surgeon I know:) He grew up out here and a few of the elderly ladies who needed knee surgery because he knew them growing up, he totally made house calls for them and one even cancelled his vacation to take care of. I am not sure why I told you that, but I think it is because one day you’ll be done and you can live your life and practice as you want and it will be making people better and knowing what I know of you, giving them the best care you can!       That is so awesome of your friend! That's the kind of doctor that I hope to be (except not a surgeon--family med all the way for me!). I'm not entirely sure what kind of practice and life I'd like to have right now, but throughout the year, I've definitely gotten to see more of what I do and don't like about different aspects, and it's helping me to shape what kind of practice I'd like to have in the future--I'll figure it out eventually! :] I like to think that I'll end up exactly where I'm meant to be! <3

  17. Yummm!! That salad looks delicious. My favourite salad is watermelon salad with fresh basil and feta cheese! The saltiness of the feta makes for a really nice addition to the watermelon. Your study buddy is so cute!!! <3 <3

    The excitement of my summer was BlogFest and IDEA World this past weekend. Now that I'm back to reality it's back to 17-hour days and busting my butt! However, I'm super grateful to be as busy as I am because it means things are heading in the right direction, which is keeping me hopeful that next year I might actually have a real summer ;)
