Blueberry Acai Smoothie Cups

So here’s the thing–I had a recipe planned for a Blueberry Protein Smoothie Bowl…but when I finally got around to making it a couple weeks ago, I realized that I no longer had any bowls left in my apartment.

That’s right. Not a single one.

I’ve been eating out of Tupperware containers, but let’s face it: Tupperware really doesn’t photograph all that well. (sigh)

Case in point: I massively altered my intended recipe. (Gotta learn to roll with the punches, right?)

This could still be a smoothie bowl if you, y’know, put it in a bowl. But since I presently am not able to do so, you’ll just have to use your imagination. :D I used my silicone baking cups (affiliate link)—they work for everything! :P

Since space was limited, I just topped em’ each off with chopped/sliced nuts and a sprinkle of unsweetened coconut flakes, but as with my past smoothie bowl recipes (e.g. Tropical Smoothie BowlTropical Acai BowlCoconut Acai Bowl…), feel free to go to town on the toppings! If you need ideas, I’ve listed a couple here:

  • dried or fresh fruit, chopped/diced/sliced
  • chia seeds/hemp seeds
  • ground flax seed
  • cacao powder

It’s really darn hot here, and since I take almost all my food pictures out on my balcony, they melted a little before I actually snapped the pictures. har har. Still good though! <3

Blueberry Acai Smoothie Cups

blueberryacaismootihecupIngredients:

  • 1/2 cup frozen blueberries
  • 1 Sambazon unsweetened smoothie pack
  • 1/4 cup cactus water
  • walnuts, chopped
  • almonds, sliced
  • crispy pili nuts, chopped
  • unsweetened coconut flakes

Instructions:

  1. Combine blueberries, acai smoothie pack, and cactus water in a blender and blend until smooth.
  2. Pour into silicone baking cups (or a bowl) and add desired toppings!

  7. I understand you on the tubberware thing haha. My husband is usually the voice of reason on dish washing around here :).

    I will have to try this out! I always drink my smoothies, but this is a great alternative!!

    1. I hadn’t either until I found it on sale! I can’t really describe the taste, but it almost tastes like berry-infused water to me…? (I am terrible with food descriptions.)

    1. Ah. That might be a hard one–I got mine at my local Kroger, but I think it’s also available online if your usual grocery store/health food store(?) doesn’t stock it!

  18. It was Blueberry Day and I didn’t even celebrate – rats! Haha yes tupperware doesn’t photograph nicely, but try those pyrex glass bowls – very pretty (and it stores things too!)
