Welcome to May’s Ultimate Coffee Date! I’m still in Ireland right now + on the tail end of my trip…and I don’t wanna leave yet! It’s so pretty here and I feel like there’s still so much more to explore. :( Apologies though if the spacing/photos are wayyy off though; the app doesn’t seem to wanna work smoothly..
Ultimate Coffee Date: May 2025

One of my favorite moments on one of our hikes! The deer was trying to get me to feed it and I was telling it that (a) I can’t feed it and (b) I really didn’t have any food. 😅
If we were having coffee/tea today, I’d tell you that…I keep saying I’m going to start up Travel Tuesday again, maybe this year will be the year I actually go back to it (maybe even the cooking part too?! I can’t believe this used to mostly be a food blog 😭)…



If we were having coffee/tea today, I’d tell you that…I’ve had more fish n chips over the past 2 weeks than I usually have in an entire year (or 2 years?!). Granted, they’ve all been really tasty because they do it so well here, but I’m also looking forward to non-pub food soon too, hehe.

If we were having coffee/tea today, I’d tell you that…there was a super cool yarn store in Cork where I may or may not have gone to townnnn on. (Everything was so pretty! 😅) I guess I’m gonna be relearning how to knit + hopefully also finishing a crochet project at some point this year!

Oh, this looks so beautiful! I can see why you don’t want to leave. You will have to come back and show us what you knit with that yard.

Change of subject, I actually had fish -n-chips last weekend on my trip (but I wasn’t in Ireland, LOL).
