Tropical Protein Smoothie

What fruits most remind you of a summer tropical vacation?

I adore beaches and warm weather, so I’m invariably reminded of coconuts, pineapple, and mangoes. <3 It is my hope that as a graduation present to myself after I finish med school, I’ll be able to send myself on a vacation to Hawai’i (or some such super-pretty + beachy location).

When I first got back to California after my first year of medical school, I ate 12 mangoes in a single day (yes, on top of my regular meals). It’d just been such a long time since I’d had one (they were kinda expensive) that I kinda couldn’t help it. :x (Portion control is not my strong suit, but I’m working on it.)

And let’s not get started on coconuts + coconut water! :O One of the things I loved most while I was in Thailand and the Dominican Republic was that I could get fresh coconut + coconut juice at any time. They’d hack it open with a machete right in front of me, and it was glorious. *-*

So I decided to throw that all together to make a protein smoothie…but without protein powder (no ways!). The “secret” ingredient here is in the tofu. If you have nothing against soy products, tofu is a wonderful way to incorporate more protein in your diet! I’ve added it into my smoothies before (but that was way back in my days as an antisocial blogger), so I decided to revisit it again! :]

Without all the ingredients to make this smoothie pretty, it only takes 5 different ingredients to make it! (Yay! :] ) Shall we get on with the recipe?

Tropical Protein Smoothie

  • 2 pineapple rings
  • 1/4 cup pineapple juice
  • 1/2 cup coconut juice
  • 2-3 oz. silken or soft tofu
  • 4-5 frozen mango chunks
  • sprinkle of unsweetened coconut flakes (garnish)
  • sprinkle of hemp seeds (garnish)

Instructions:

  1. Combine pineapples, pineapple juice, coconut juice, and frozen mangoes in a blender and blend until smooth.
  2. Top with toasted coconut chips, hemp seeds, and granola (if desired)!

  1. This looks so good! I have to admit, I’ve been a little wary of adding silken tofu to desserts, and I’ve never even thought of adding it to a smoothie! I would imagine the delicious fruit and coconutty goodness might mask the scariness of the tofu though…no?

    1. Thanks, Ariana! :D I am probably biased because I love tofu in almost any form, but I think the fruit really does do a great job of cancelling it all out! Silken tofu is super-super smooth!

  3. That definitely sounds like a beach drink! I’ve never really tried tofu, but I always see a large selection of it in my stores…might have to check it out!

  6. I tried tofu in a smoothie once, and I wasn’t so impressed. I could still get some of the funk, you know? But maybe with pineapple, it would mask it.

    1. Pineapple tends to be pretty good at masking other flavors! :O What kind of tofu did you use? I feel like silken tofu blends a lot more easily since it’s extra-extra smooth!

  15. Wow, 12 mangos in one day is impressive! My oldest will eat one a day plus sometimes some in a smoothie when I have them in the house. This smoothie looks delicious!

  19. Gosh, I love all these ingredients (although, I’ve never had tofu in a smoothie!). Mangos are my favorite and coconut anything makes me feel like I am right at the beach! I gotta try this soon!

  21. I’m OBSESSED with coconuts! Caps were definitely necessary haha. I have these new popsicles I got from the grocery store well they’re not necessarily new but new for me, but anyways they’re by a brand called Outshine and it’s the creamy coconut flavor and I literally buy 5 boxes of them a week I love them so much!!! Can’t you believe I’ve never had a mango before? I have in a flavored drink if that counts….lol

    1. Ahhhh, I’ve heard of Outshine! I have literally stared at them through the glass at the grocery store and talked myself into not getting them because they’re technically an unnecessary expense (…). They look so good though! *-* (I will likely cave at some point, haha. I’m super-craving popsicles right now!)
