Sunshine Kiwi Oats

Have you ever had golden kiwis? I’m not sure they ever crossed my radar until fairly recently, but I’m so glad they did! They have smooth skin and a tropical-sweet taste (I think we all know how much I adore anything tropical…?)!

I’ve always been a fan of sweeter fruits vs. tarter flavors, so these were right up my alley! :]

One serving (2 kiwifruit) provides 3x the amount of vitamin C than an orange and as much potassium as a medium banana! :O It’s also a great source of vitamin E, folate, and contains 4g of fiber (equivalent to 1 cup of cooked Brussels sprouts!).

Another plus is that you don’t have to peel them! Just cut it in half and use a spoon to scoop out the contents! Since I’m always on the go (ah, the life of an intern), portable snacks that are quick, easy + healthy are where it’s at for me!

Zespri is a grower-owned brand comprised of over 2500 kiwifruit growers! They’re in season in New Zealand from May through October, so you should be able to find em’ in stores this season through October!

SunGolds are a natural cross between gold varieties of kiwifruit (all of Zespri’s kiwifruit are non-GMO!). Kiwifruit taste can actually be measured by something called the “brix.” The higher the brix (determined by the dry matter content when all the water is removed), the sweeter the fruit!

Pro Tips:

  • How to tell if ripe: Hold it in the palm of your hand and squeeze gently–it should yield to slight pressure when ripe!
    How to speed up ripening: Leave out at room temperature for ~3-7 days to ripen. If you want to eat em’ faster than that, put it in a paper bag with bananas or apples (the ethylene gas emitted from them will help speed up the ripening!). Once ripe, it can be stored in the fridge for up to 2 weeks!

First, let me introduce another key player in this recipe! Back in my West Virginia adventures with Trish, we stopped at the farmer’s market and happened upon this Summer Sunshine jam. The lady makes these jams out of peaches, oranges + pineapple–it sounded all sorts of amazing, so we each picked one up!

While I was growing up, I always had oatmeal with an egg thrown in because it fluffs it up so well (and yay for added protein!).Ā If you’re a fan of having something sweet but still healthy for breakfast, this recipe will be perfect for you! :] (This recipe makes 2 servings!)

Sunshine Kiwi Oats

Sunshine Kiwi Oats

Course: Breakfast
Keyword: healthy, vegan, vegetarian
Servings: 1 serving

Ingredients

  • 1/2 cup quick-cook/minute oats
  • 1 cup unsweetened vanilla soy milk
  • 2 eggs
  • 1-2 golden kiwis sliced/diced
  • ~1 tbsp Summer Sunshine jam
  • 1 sprinkle of hemp seeds optional

Instructions

  • Add oats and milk to a small pot and let cook on medium-low heat.
  • Once it comes to a simmer, reduce the heat and crack an egg into the pot. Let cook, stirring frequently, until it reaches your desired level of consistency. (Add more liquid if desired.)
  • Pour into a bowl, then swirl in the jam and diced kiwi. Mix until combined.
  • Top with more kiwifruit, sprinkle with hemp hearts, and serve hot!

  2. I WANT A KIWI SPOON! Though I will say, I eat them skins and all! I make my oats with water and then egg white. I’m not an overnight oats fan because I don’t like cold oats or oats made with milk. This jam sounds delicious!
