Stir-Fried Tomato and Eggs

I recently scored 3 dozen eggs for $1.98(?!), so I’m sharing my absolute favorite Chinese dish with you today: 番茄蛋 (aka Stir-Fried Tomato and Eggs)! :]

Truth be told, I actually wrote down the recipe for it back in 2012 when this was basically my private journal, but updates are nice?! My dad’s version involves adding a little bit of ketchup and sugar but…I have no sugar and I forgot to pilfer a small container of ketchup from the hospital, so as per usual, I’m working with what I have!

My grandma used to cook this for us when we were little, especially if she knew that I was having a bad day. <3 I’ve never been able to recreate it to the way hers was, but I suspect part of this is just because of the fond memories I have of those times with her.

If you happen to work in anything related to surgery and the blue hue of that cloth in the photo looks strikingly familiar, it’s because those cloths were pilfered from my very first surgery rotation! The untouched + unused cloths that are brought into the OR are usually disposed of, which is a huge huge waste, so my surgeon just gave them all to me (same with the batteries) and I amassed quite a collection. Now they work as cleaning cloths, dinner placemats, and food photography props. Yay for repurposing items + reducing waste!

Stir-Fried Tomato and Eggs (番茄蛋)

Ingredients:

  • 4 eggs
  • 1-2 tsp chicken or mushroom bouillon powder
  • 4 tomatoes, cut into wedges
  • 1 drizzle of sesame oil
  • white pepper (to taste)
  • sprinkle of sea salt
  • 2-3 cloves garlic, minced
  • green onion, sliced (optional)

Instructions:

  1. Crack the eggs into a bowl and beat together with the bouillon powder, salt and white pepper.
  2. Add a drizzle of sesame oil into a saucepan on medium heat.
  3. Pour in the egg mixture and minced garlic. Let cook, stirring occasionally until ~85% cooked, then remove eggs from pan.
  4. Place cut tomatoes into the pan and stir-fry until ~85% cooked. Add the eggs back in and cook for another 3-4 minutes.
  5. Serve onto plate and garnish with green onion, if desired.

  6. Ahhh nostalgic meals are the best. My grandma always used to make us “soupy” literally just chicken stalk and ramen lol but we loved it. Can’t wait to give this a try

  8. Farrah, I love eggs – absolutely love them and this is making me hungry! What a lovely, comforting, family dish – am thinking my daughter would love your dad’s version with ketchup and sugar – she’s always adding the two to scrambled eggs whenever I make them.

  9. This looks delicious. A childhood favorite is cinnamon toast. If I’m feeling icky or just need a comfort food, I’ll make toast, put a little butter on it and sprinkle some cinnamon on it. So simple but takes me back to childhood!

  10. I loveee how food can take you back to memories or remind you of a certain person. For me, banana bread, hot chocolates and vegemite and cheese on toast always bring me back to my childhood. My mum would surprise us with hot banana bread when we got home from school every couple of months (and she wasn’t a baker so it was a hugeeeee deal) and hot chocolates were something she’d make us in winter in the mornings or afternoons before/after school to warm us up! Vegemite on toast is just an Australian staple :P

  11. This was one of my favorite dishes in the teacher’s cafeteria at our school in ShenZhen…not that I think the cafeteria version was all that great…but it’s a hard dish to mess up. :P I think it tastes much better when it’s actually homemade.
