Sriracha Tuna Fried Rice

…Can I tell you how much I loved (and needed) this month’s theme?

Since I’ve been living for under $10k/year for almost the past decade, the loans I took out for the first 3 years of med school are actually adequate enough that I’m only requesting enough money to cover 90% of my tuition next year, and nothing for living expenses because I will not leasing an apartment next year. (Who needs an address anyway? :[ )

My school actually emailed me because they thought I’d made a mistake, but yeah, nope. I meant to do that. Times are tough, m’friend, and I’m trying to keep my student loans from piling any more than they already have.

I’m moving out of my apartment in under 2.5 months, so I’ve very much been trying hard to eat/use up everything in my kitchen/pantry, and I’ve basically placed myself on yet another money/grocery ban. (Exceptions apply only for fresh fruit/vegetables.) This helps with the whole saving-money aspect, so it’s a win on both respects!

To aid in these efforts, my friends and I had a potluck about a week and a half ago so we could enjoy some good company whilst finishing off various foods in our respective apartments, and I like to think it worked out pretty well!

Breakfast cookies, shrimp scampi (I couldn’t eat that, but they said it was good!), chicken biryani, pasta, stir fried green beans, curry vegetables, chicken gnocchi soup, strawberry punch with almond-coconut pudding squares (that’s how you Asian-ify punch, just for the record), and something I don’t recall the name for that tastes a whole lot like a Chinese dimsum called 沙 翁 (saiyong — Chinese sugar egg puffs; they’re basically like donuts)…it was an awesome feast. :]

But…I still have a lot of ingredients left, so I had to come up with more ideas! :O (We’re also probably going to try to have more of these because getting to hang out + eat good food together is pretty awesome for lifting your spirits when you’re down or feeling alienated from society.)

This entire recipe is comprised of things that have been hanging out in my apartment for way too long. You already know I’ve been trying to use up my rice, but aside from the eggs, everything else happens to be stuff I need to use up in my apartment, so I present to you the fruits of my labor!

Sriracha Tuna Fried Rice

srirachatunafriedriceIngredients:

  • 2 1/2 cups day-old brown rice
  • 1 tsp sesame oil
  • 2-3 tsp reduced sodium soy sauce
  • 2 eggs
  • 2 cans tuna
  • 6 oz. snow peas
  • sriracha sauce (to taste)

Instructions:

  1. Heat up a large pot/skillet on medium-high heat and add sesame oil.
  2. Crack the eggs in and let them cook for 2-3 minutes, then add tuna, stirring occasionally.
  3. Add snow peas, and mix in rice + soy sauce. Cook until warmed through.
  4. Drizzle with sriracha.

  1. Even though I’m not a part of Recipe Redux, I’ve been enjoying seeing what bloggers make with this theme. I like using up random leftovers and ingredients in my kitchen in new ways! Man, that does look like a feast with friends! I want more potlucks in my life when I move to Austin. Not leasing an apartment? Are you going to be okay with wherever you’re living? I know you’ve got a strong head on your shoulders and I think it’d incredibly smart of you to save as much money as you can while you’re still in med school!

    1. I love all the beautiful recipes everyone comes up with! (If only I had enough money to get the ingredients to make everything + enough stomachs to eat it all! :O )

      I think I’ll be okay! :D I’m looking mostly at places that either offer free (or heavily discounted) student housing, or are close to family/friends that I can live with! :] I’ve been trying to find an excuse to go to Austin, but haven’t found a program near there yet! :P Potlucks are the best! <3

  3. This looks awesome! I love tuna & sriracha sauce! I hate eggs though, but when I have fried rice at chinese places, I don’t taste the egg, so I may have to try it to see if I can manage to achieve that as well, lol. Great idea on a potluck with your friends to finish off extra food lying around…much better than letting it go to waste and tossing it….:).

  7. Looks like you guys had a very nice spread for your potluck. The Siracha Tuna Fried Rice looks yummy (and I don’t even like tuna). I like how you said that you allow for the purchase of fresh fruits and veggies even when you’re on a spending ban. I’ve never considered that. We’re on a ban for this month as well (for totally overspending in the food department) but my husband just complained about needed fruit since he eats it every morning on the way to work. I stated that we needed to stick to our ban, but you’ve given me a whole new perspective. Thanks!

It helps to include little provisional statements every here and there so that the ban doesn’t seem quite so bleak and stringent! :P I’ve only gone to the grocery store once this month, and am gonna see if I can get away with just that trip for the rest of the month, but if I run outta fresh fruit, I might have to make a trip! :P

  11. I am so amazed with your financial planning, really, I couldn’t imagine being involved in everything you do inside med school and out.     Sounds great, but unfortunately I can’t so tuw canned tuna thing. Just something about it doesn’t let me enjoy it. Nevertheless, good recipe. Wonder what else you got in your pantry.

    1. I like it because it’s super cheap and filling, but ahi tuna would beat it any day! :P

      Pretty much everything I make from here on out is from my attempts to clean out my pantry! I have recipes scheduled out as far as October, ahaha. x_x

    I used to make a warm tuna salad when I was in college – I never thought to add rice though – such a brilliant idea this meal is – love the sriracha added on top!

  17. Wow, I love that theme! It could definitely save you bucks from just buying food. I love experimenting with ingredients but I’m not so sure I’m confident with that. I’d have to practice, though.
