Rice Cooker Curry Risotto

I pretty much always have a whole crap ton of rice in my pantry in some way, shape or form (jasmine, brown, sushi…). I figured it was about time to do something with said rice!

I’m currently on my last med school rotation ever(!), so I’m playing catch up on some of the recipes I made with my friend while I was still back in California. I’m finishing up my second week of my outpatient peds rotation, and it’s been pretty fun thus far! My preceptor understands the plague that is my senioritis and has given me a couple afternoons off (:O!).

So while I’m trying to fend off lots of snotty kids (literal snot–most of them are pretty sweet), flu, colds, and strep throat, check out our recipe for Rice Cooker Curry Risotto! :]

Since we were feeling extremely lazy, we decided to keep it as simple as humanly possible.

It doesn’t get much simpler than throwing a bunch of stuff into a rice cooker (affiliate link!) and pressing “start!” Don’t let the “long” ingredient list scare you–most of the ingredients are just a bunch of spices! :] If you aren’t feeling quite as lazy as we were, you can sub in actual fresh garlic + onion instead of the powders.

Rice Cooker Curry Risotto

Ingredients:

  • 1 14.5 oz can diced tomatoes
  • 1 cup arborio rice
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp paprika
  • 1 tsp onion powder (or 1/2 onion, diced)
  • 1 tsp garlic powder (or 2-3 cloves garlic, minced)
  • freshly ground black pepper
  • 1.5-2 cups coconut milk
  • 1 tsp turmeric
  • 3 whole black cardamom
  • 1 whole green cardamom
  • a few sprigs fresh parsley (optional)

Instructions:

  1. The coconut milk and can of diced tomatoes should add up to ~3 cups of liquid.
  2. Combine all ingredients into rice cooker and press start!
  3. Garnish with fresh parsley, if desired!

  11. I love simple and easy recipes because I’m lazy 95% of the time when it comes to cooking lol. I don’t own a rice cooker though but I do know how to cook it in a regular pot. Is there a difference between doing that way and using a rice cooker because I clueless about it?

    1. haha, I’m super lazy most of the time too. I hate to confess this, but I actually have never made rice outside of a rice cooker, and can’t answer this question. :[ Someone on facebook said they’d try making it in a pot, so if she tells me how it goes, I’ll definitely let you know!? :o

  13. We also always have at least two kinds of rice in the cupboards–there’s just so much you can do with it! I tend to be a bigger fan of plain rice with some kind of dish to top it with rather than rice cooked with the other stuff, though I do recognize it would be far more efficient to just cook it all together…

  18. This looks YUMMY!! Once we get settled in our new house I totally need to get a rice cooker! I have literally had issues making rice since I was in high school! For as much experience I have cooking, I am totally ashamed of this fact ;) Haha
