Mushroom-Topped Steak with Grilled Zucchini + Potatoes

Do holiday steaks count as holiday cheer? (They make me happy…)

A little while ago, I entered a giveaway for Butcher Box on FitFluential, and as luck would have it, I actually won!!! They offer organic and grass-fed chicken, beef and pork in boxes they’ll deliver to your door! All their animals are also humanely raised and free from hormones and antibiotics.

I don’t know that I’ve ever cooked steak on my own, and delicious food is better off shared, so I brought the steaks along with me to West Virginia so Linda and I could have steak night. :D!

Linda came up with this amazing deliciousness, so I figured I’d share!

Mushroom-Topped Steak with Grilled Mushrooms + Potatoes

You'll Need...

  • (Marinade)
  • 1/2 cup soy sauce
  • 1/4 cup orange juice
  • 1/4 cup water
  • 1 tsp crushed garlic
  • freshly ground black pepper
  • 4 4-oz. grass-fed sirloin steaks
  • 2 zucchini, sliced lengthwise
  • small red potatoes, boiled
  • 8 oz. baby bella mushrooms, sliced

Directions

  1. Marinate the steaks in ziploc bag with the marinade ingredients (soy sauce, orange juice, water, crushed garlic, pepper) for 1 hour. (Turn every 30 minutes.)
  2. While steak is marinating, boil the potatoes until soft.
  3. Take the steaks out of the refrigerator 1/2 an hour before cooking to allow it to return to room temperature.
  4. Heat the grill to 500. Grill to taste (amount of time will be based on how you like your steaks cooked and the thickness of the steak).
  5. After turning the steak to the other side, drizzle olive oil, and add salt, pepper and garlic powder onto vegetables.
