Curry Popcorn

Greetings, m’friends! I’m participating in another food blog hop of sorts (just in case you missed Choctoberfest!)! We were each “matched” to another food blogger–I made a recipe (Curry Popcorn!) that was somewhat inspired by my food blogger match’s interests!!

Share Our Strength is working to connect hungry kids with programs that can help them to get the food that they need, so this food blog hop was also to support No Kid Hungry!

My food blogger match was Food-Filment! She loves cooking, especially when it comes to Indian food + spicy food, and she has a lot of delicious slow cooker recipes that I’d love to try out–especially the Rajma Masala (if only mine weren’t across the country at the moment…)!

I’m also intrigued by her recipe for Crispy Bitter Gourd Fry, because it looks a whole lot like a dish from a TVB series I’m currently watching (愛情食物鏈, aka Love as a Predatory Affair)…and I’m always up for anything with mango in it, so that Raw Mango Chutney looks delicious! <3

Now on to the recipe!

…I swear I meant to make something more substantial, but my Internal Medicine hours were kinda long, and I just started my Neurosurgery rotation this week…and…I uh, left for my rotation at 4:45 a.m. and got home at 9:30 p.m. and I gotta leave again for my next shift at 4:45, so…let’s leave it at that. :O

Hence, the simpler the recipe, the better, because I very desperately need some sleep!

Curry Popcorn

Ingredients:

  • 1/2 cup unpopped popcorn kernels
  • 1 + 1/2 tbsp unsalted butter
  • 1/2 tsp curry powder
  • 1/2-1 tsp chili powder
  • 1/2 tsp ground turmeric
  • 1 tsp ground cumin
  • sprinkle of cinnamon

Instructions:

  1. Heat the coconut oil in a large pot on medium-high heat (~6-7/10, if your stovetop happens to have numbers).
  2. Pour in the popcorn kernels and cover with a lid, leaving a tiny bit of space to allow it to vent.
  3. Stir 1/2 tbsp butter + spices together over medium heat until combined, then drizzle over popcorn and toss until coated!

Confession: sometimes I get tired of having to stay at work later and have 30 minutes or an hour less of time at home in the afternoons/evenings, but then I remember the life of a med student or a doctor…and I cannot complain anymore. Ha! I don’t know how you do it, but I’m glad somebody can devote their life to the greater good of helping people get well and stay at work for those long hours!
