Crockpot Pumpkin Cranberry Bread

Trimming the Table: The holiday baking season is upon us. Time to pull out all the stops. Show us the healthy dessert you will be sharing with family and friends this season.

I don’t know that bread necessarily counts as a dessert to you, but it is in my book, especially when served with ice cream! (You can make your own vegan ice creamĀ to pair with this recipe!)

The best part is that it’s one of those “throw ingredients together and forget about it” recipes, because you can make this in your slow cooker!

I’m on inpatientĀ service right now, which basically means I’m working 6 days a week for at least 12 hours a day. My one day off is usually spent sleeping, cleaning my apartment, catching up on errands, and meal prepping for the following week. (Oh, the joys of adulting…)

As such, uncomplicated recipes are my favorite thing ever right now. If you’re swamped with a billion things you need to do before Thanksgiving, consider making this for a healthified dessert! It’s super moist and delicious, so I’ve actually been having it for breakfast (yay for dessert for breakfast?!)! :P

Crockpot Pumpkin Cranberry Bread

You'll Need...

  • 2 eggs
  • 3/4 cup canned pumpkin
  • 2 tbsp coconut sugar
  • 2-3 tbsp honey
  • 1 1/3 cups whole wheat flour
  • 1/2 tsp ground ginger
  • 1/2 tsp ground cloves
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 tsp baking powder
  • sprinkle of sea salt
  • 1/4 cup dried cranberries
  • 1/4 cup chopped pecans, toasted*

Directions

  1. Lightly coat 4-quart crockpot with cooking spray.
  2. Combine eggs, pumpkin, sugar, + honey in a bowl. In a separate bowl, stir together the dry ingredients. Fold in the cranberries.
  3. Spoon batter into crockpot and top with remaining cranberries + pecans.
  4. Cover and cook on high for 2-2.5 hours or until it passes the toothpick test.
  5. Cool on a wire rack and use a wide spatula to lift it from the crockpot.
  6. Cut into slices and serve!

Additional Notes

*To toast the nuts, preheat oven to 350 and spread nuts on shallow baking pan. Bake for 5-10 minutes or until lightly browned, shaking 1-2 times to prevent them from burning. You can also toast them in a skillet over medium heat for ~2 minutes or until lightly browned. Stir frequently to avoid burning.

    1. Hope you like it! :D I decreased the sweetener content by a lot since I was going to be eating it with ice cream, so if you like something sweeter, feel free to add a bit more honey or maple syrup in there! :P
