Crockpot Cheesy Turkey Casserole

I’m cheating today and don’t actually have a copycat recipe for you, so here’s a picture of my cat instead. :O

(I didn’t have time to make what I’d planned on making. Part of this has to do with the fact that I’m going home(!!!) in a little over a week and am diligently trying to eat every perishable substance in the fridge right now, so buying more groceries isn’t the greatest idea!)

Thus, I am instead continuing my usual mission of trying to use up everything I have in the apartment…and the plus side to this is that you can make this sucker in bulk in your crockpot and have delicious meals ready to go for the rest of the week!

I packed the leftovers into 6 mason jars and topped em’ off with spinach for a healthy and easy portable meal that I could bring with me to the hospital!If you recall #CookoutWeek on my blog, you might recall one of the sponsors, Swine Dining! I backed their kickstarter since I’d heard so many awesome things about their spice rubs/seasonings, so I’ve been experimenting with em’ and here’s my first creation!

I like to think I’ve become less of a picky eater as the years have gone by (I was never all that picky, but back in the day, if I’d heard the words, “cheesy” in relation to a food/recipe, there’d be no way I’d partake in whatever it was.) This Crockpot Cheesy Turkey Casserole is super delicious to warm up with on a cold night! :]

Crockpot Cheesy Turkey Casserole

You'll Need...

  • drizzle of EVOO
  • 1 lb. lean ground turkey, browned + drained
  • 1/4 cup red onion, diced
  • 4 small potatoes, thinly sliced
  • 1 10-oz. can cream of mushroom soup
  • 1 15.25-oz. canned corn, drained
  • 1 10-oz. can diced tomatoes with liquid
  • 1 15-oz. can black beans, drained
  • 1-2 tsp Swine Dining Jamaican Jerk Original seasoning (or your choice of spices)
  • freshly ground black pepper (to taste)
  • sprinkle of sea salt
  • 1/2-1 cup shredded cheese

Directions

  1. Heat up some extra virgin olive oil in a skillet and brown the ground turkey, stirring occasionally.
  2. Put all ingredients aside from the cheese into your crockpot and cook on high for 3-4 hours or low for 7-8 hours.
  3. Uncover your crockpot and sprinkle in shredded cheese, then cook for another 30 minutes.
  4. Sprinkle with additional cheese and serve!

  1. You had me at crockpot! Although I had a major crockpot fail on Wednesday. I prepped a chicken dish in it prior to leaving for work, set it on low, and dreamed about the yummy dinner waiting for us later that night. We came home and I knew right away dinner was ruined. It totally burnt! Usually you can’t go wrong with a crockpot. Lol…I did!

  11. I’m a huge fan of crockpot meals. Growing up my Mother would fill and set the crockpot when we arrived home from school, the house was full of savoy flavors dancing in the air tempting my sister and me to devour dinner right then and there I bet you are excited to go home, Farrah!

  16. This looks yummy. I make something similar to this but without the potatoes and I use chicken. I like using my slow cooker because the meat is so tender. I’ll be posting my slow cooker pulled pork tenderloin soon.
