Caprese Salad

The food blogger I’m sending love to is none other than one of my Foodie Friday co-hosts–Annmarie! She makes all kinds of delicious recipes that I’d love to try out, and although I haven’t exactly recreated one of her recipes (I’m trying to pack in as much time with my friends/family as I can while I’m at home), I definitely hope to soon. (For instance, that Strawberry Shortcake Smoothie she made last week… :P ) She made a super delicious Caprese Grilled Cheese last year and I’ve been super-craving Caprese Salad lately…

I’ve technically made caprese salad and shared the recipe on here before (Insalata Caprese!), but that was back in 2011, when my blog was just a dumping ground for the recipes I tried out peppered with occasional excerpts of my life. I keep saying that someday, I’ll go back and pretty up all my old posts, but let’s be real, that’s going to take a while. (Baby steps!)

In any case, Caprese Salad made yet another appearance (I’ve also made Parmesan Tilapia with Roasted Caprese Salad…) last weekend, when my friends and I got together for epic food adventures and kitchen experiments! Kate was running late, so she appeared with 5 ingredients on tow and whipped this up super quick. It makes for a super pretty and tasty dish for any food gathering!

Caprese Salad

Prep Time5 minutes
Course: Salad
Cuisine: Italian
Keyword: 5 ingredients + under, easy, healthy, quick, vegetarian
Servings: 4 servings

Ingredients

  • 3 large garden-fresh tomatoes thickly sliced
  • 12 oz. ball of mozzarella cheese thickly sliced
  • fresh basil chopped
  • balsamic vinegar to taste
  • drizzle of extra virgin olive oil to taste

Instructions

  • Layer the tomato and mozzarella slices on a plate and sprinkle with chopped basil.
  • Drizzle with extra virgin olive oil and balsamic vinegar.
  • Serve immediately!
