Parmesan Tilapia with Roasted Caprese Salsa

Seeing as how the only seafood I can eat = fish, what else would I be sharing with you today? ;] I was working on a baking project of sorts, and had extra grape tomatoes and mozzarella, so I figured I’d add in a side as well (also because the grilled fish on its own wasn’t lookin’ too pretty).

I was originally going to be strutting around in a swimsuit tonight and somewhat banking on winning people’s hearts so that I could earn a chunk of change to throw towards my student loans, but as luck would have it, the event got cancelled because there weren’t enough fighters (sigh). I’m pretty bummed out because I think I had a very decent shot at winning first place this year since I gained a decent fan base last year, but as this is yet another situation out of my control, I’m going to look on the bright side instead.

Not being in said competition means that I’ll have more time to spend/volunteerĀ at Please Save A Cat and Friends For LifeĀ (you can read more about both of these right over here!), more time to hang out with my church friends, and more time to study. It also means that I won’t have just 3 hours to learn how to do my makeup and hair, since that’s no longer necessary. Silver linings, amIright?

Parmesan Tilapia with Roasted Caprese Salsa

Ā Ingredients:
(Tilapia)

  • 2 tbsp ground flax seed
  • 1/4 cup rice milk (or your choice of milk)
  • 3 tilapia fillets
  • pinch of salt
  • freshly ground black pepper, to taste
  • garlic powder, to taste
  • 2-3 tbsp grated Parmesan cheese

(Roasted Caprese Salsa)

  • 6 oz. grape tomatoes
  • 2 tsp EVOO
  • pinch of salt
  • pinch of brown sugar
  • 1-2 oz. fresh mozzarella, cubed
  • 1 tbsp balsamic vinegar
  • freshly ground black pepper, to taste

Instructions:

  1. (Roasted Caprese Salsa) Preheat toaster oven to 400 degrees. Toss the grape tomatoes in the olive oil, salt and sugar, then spread them in a single layer on a tray and cook for 20 minutes. Let them cool off a bit and toss them with the mozzarella, basil, pepper and balsamic vinegar.
  2. (Parmesan Tilapia) While that cooks, add flax seed, salt, and rice milk into a bowl and drench the tilapia fillets in it. Put onto Foreman grill for ~4 minutes. Sprinkle with garlic powder, black pepper and Parmesan cheese. Flip (season again if desired) and cook for another ~2-3 minutes.

Alternatively, you can also use a little extra virgin olive oil (EVOO) and cook it on the stove!

  4. Mmmm I love tilapia! I think the last time I made parmesan tilapia though was when I was in college and I set the oven on fire…clearly my cooking skills weren’t as polished as they are now, haha!

  7. Um…you had me at parmesan and tilapia! Two of my favorite things! I’m currently obsessed with fish tacos right now (as I posted on my blog) so I would probably put all this on a taco and see how it tasted lol! Get creative with dinner right?

(Currently staying at the shelter this weekend! :P ) I can’t volunteer nearly as much as I used to anymore because my rotation site’s 3 hours away from here, but I find excuses to come back whenever I can. The lady who runs this place is such an amazing person! <3

    1. haha, yay! I meant to use egg with it to make everything stick to the tilapia better, but found out rather belatedly that I was all out of em’, so I tried to sub with flax seed meal and water. It worked better than I thought it would! :O
