Orange Cranberry Walnut Salad

Merry Christmas (if you celebrate, and welcome to our last Foodie Friday of the year! I’m linking up with Annmarie from the Fit Foodie Mama, Esther from Chocolate Runner Girl + Jess from Hello To Fit to create awesome healthy recipes each week! This week’s theme = Christmas!

If you’ve been around since last year, you may have already seen this recipe for Orange Cranberry Salad, because I shared it last Christmas! I’ve souped it up a little though, so yay for more protein and nutrients! I also have another awesome Nektar Naturals giveaway for you today, so if you missed the last one, now’s your chance! :]

These honey crystals are especially awesome to me right now because they’re so darn travel-friendly! With this colder weather, I also like that I get to avoid having it crystallize and then having to reconstitute it back to liquid form. Aside from smoothie bowls and tea, I also decided to throw it into our traditional holiday salad!

I generally opt for less sweeteners anyway, but if you let this chill for a while before serving, the flavors combine together and it gets a little sweeter, so don’t worry too much if it’s still a little tart after you’ve added some. You can always sprinkle a little more in later!

Orange Cranberry Walnut Salad

Ingredients:

  • 8 oz. fresh cranberries
  • 1 fresh navel orange, peeled + chopped
  • 1/2 cup walnuts
  • 1/4 cup hemp hearts
  • 1/3 cup orange juice
  • 3 tbsp Nektar Naturals honey crystals (or to taste)

Instructions:

  1. Put cranberries into a food processor and process to desired consistency. Repeat with the walnuts. Add a little orange juice if it has trouble blending.
  2. Chop the orange and add it to the cranberry-walnut mixture.
  3. Mix in the hemp hearts, a little more orange juice (if desired), and honey crystals.
  4. Chill before serving.

  5. This sounds like a great recipe. I’d use more walnuts though and fewer cranberries, as I’m more of a walnut fan. I wonder what hemp hearts taste like.

    I’d love to use these in my tea and oatmeal, and to sprinkle on top of sugar cookies instead of regular white sugar.

    I would use it in my hot tea with a dash of cinnamon. I would also sprinkle it on toast with peanut butter.
