Grilled Salmon with Gazpacho Topping

Hope your week has been treating you well! I’m halfway into my ER rotation right now and most of my shifts are on evenings/nights, so my schedule is all messed up. On the plus side, if I need to run errands and such, the places I need to go to are still actually open, so at least there’s that!

I like to try to reduce waste whenever possible, and since I like to cook in bulk to save time, repurposing old recipes to make new ones is a wonderful idea all around. :]

This recipe was invented at night, which is when Linda and I used to eat because…say hello farm chores and other aspects of work + life during daylight hours! We tended to eat whilst standing around the kitchen counter, although sometimes, we’d actually get to sit down. (I miss this a lot. :[ )

Grilled Salmon with Gazpacho Topping

Ingredients:

(Salmon)

  • 1 salmon fillet
  • sprinkle of sea salt
  • freshly ground black pepper (to taste)
  • squeeze of lemon

(Topping)

Instructions:

  1. Put a grill pan over medium-high heat and brush with some olive oil to prevent the salmon from sticking.
  2. Add the salmon and squeeze in lemon + season with salt and pepper, to taste.
  3. Grill the salmon until it flakes easily + is cooked through (~3-4 min on each side).
  4. Let salmon rest for ~5 minutes before topping with gazpacho, avocado slices, and cilantro.
  5. Serve hot!

  13. I LOVE salmon and I cook in bulk for most of my main meals. Yeah.. I feel ya..ER shifts can be all over the place and really mess with your schedule. It sounds like yours have been consistently at night though? Which is a bit easier on the body, but still tough. I agree though..at least you can get errands done during normal hours which otherwise never happens lol.

(My wallet cries every time I see it at the grocery store though, haha. ._. ) I have two night/evening shifts, a day shift, and a late morning shift so it’s a little all over the place but not too bad! I definitely appreciate being able to get stuff done during daylight hours–gotta take em’ wherever I can get em’! :O
