Greek Yogurt Parfaits

I’ve probably mentioned on several occasions that I’m on a crusade to eat everything in my apartment before I have to move out. Technically speaking, this really shouldn’t be so hard, but some days, I just really crave things that my apartment does not contain! (First world problems, I know. I’m sorry.)

One thing I have a crap shit ton of (yes, that is a unit of measurement) is granola. I have copious, copious amounts of granola because I keep finding those super-expensive bags (usually at $5-7 a pop) on sale for $1. The girl logic in me tells me that this is a wonderful idea, and think about all the money I’ll save! (But Farrah, if it’d been full price, you wouldn’t have gotten it. ._.)

Fear not, though! Obviously, the solution to this is to figure out recipes that’ll help me to use it all up, so here’s one of the creations I’ve come up with thus far. (If you have any other suggestions, I’m all ears!)

Since I’m going to be living in Bridgeport for about a month in March, I’m planning on just bringing my entire collection with me then and exhausting it while I’m there. They’ll be finished off, especially if I keep making these parfaits! <3

This recipe makes two servings! :D (One for now, and the other for later!) It’s super, super versatile and you can fix it with whatever combination of fruits/nuts/toppings that your heart desires! (Although if you’re going for healthy, perhaps don’t fill the whole thing up with chocolate chips and the like. :P )

The fact that it’s housed in a mason jar means that you can just grab it with you in the morning if you’re running late! :]

Greek Yogurt Parfaits

Greek Yogurt Parfaits
Ingredients:

  • 1/2 cup 0% Fage Greek yogurt
  • 1/2 cup your choice of granola (or oatmeal)
  • Nuts
  • Fruit (dried/frozen/canned/fresh)
  • 1 package Big Slice Apples (your choice of flavor)
  • (Optional) hemp seeds, chia seeds, unsweetened coconut flakes, chocolate chips

Greek Yogurt Parfaits
Instructions:

  1. Spoon 1/8 cup Greek yogurt into an 8 oz. mason jar. Add 1/8 cup granola, and 1/2 package Big Slice Apples. Top with fruit + nuts.
  2. Layer in another 1/8 cup Greek yogurt.
  3. Top with fruits + nuts and other desired fixings!
  4. Consume! (It should stay good in the refrigerator for up to 3 days.)

  2. I had the same girl logic handed down to me from my mother. My father teases us about it all the time! This is such a handy breakfast for when you have to run to class or the office.

  4. Haha you are still working thru the big slice apples :D Glad they are being put to good use! I basically have an ice cream parfait every night (sometimes Greek Yogurt, because #balance), so that counts, right?
