Purple Yam Milk

So…I haven’t written in a while and I really don’t have much of an excuse other than the fact that I decided that sleep is for the weak and wanted to hang out with my friends/family back in CA as much as humanly possible before I ran off to the cold again.

I’ll write a recap about that one of these days, but I thought I’d start off the new year (happy new year, everyone!) with a super simple and pretty healthy recipe. :D!

Purple Yam Milk

Ingredients:

  • 2 purple sweet potatoes (obtained from local Asian market)
  • 1 cup light coconut milk or soy milk

Instructions:

  1. Boil sweet potatoes until soft. Peel them and throw into blender.
  2. Pour in milk of choice.
  3. Blend.
  4. Be awed at how purple it is and consume.

My dad also threw in a fuji apple as a variation and it was pretty good as well. :O Slightly grainier texture and a bit less purple.

  1. oh my I LOVE LOVE LOVE purple sweet potatoes! i dont know how, they just taste so much better than the regular orange ones to me. so is this thick like a smoothie? or in between haha.

    1. They’re the besttttt! :D I wish they were easier to find, but I will soon be moving to a place where I think they’ll be more easily accessible! This is thick-ish, but not quite to the consistency of a smoothie! :]
