Purple Curry Cauliflower Mash

We made this back when Trish was here for our mini road trip/food tour through Asheville, NC + Lewisburg, WV. Originally, it was going to be just garlic mashed potatoes, but I found a giant thing of purple cauliflower for 99 cents, so I figured I’d throw that in too! I’ve never seen purple cauliflower before, but it’s kinda awesome!

Purple Curry Cauliflower Mash

Ingredients:

  • 3 large potatoes, cut into 1-2” pieces
  • 1 head purple cauliflower, roughly chopped + leaves removed
  • ¾ cup 0% Fage Greek yogurt
  • ¼ – ½ cup butter, melted
  • green onion (for garnish), thinly sliced
  • curry powder (to taste)
  • Freshly ground black pepper (to taste)

Instructions:

  1. Place potato pieces into large bowl and cover with cold water. Bring water to a boil, then lessen heat to medium and let simmer for ~10 minutes, or until potatoes are tender. Place potatoes into a large bowl.
  2. Bring water to a boil and add cauliflower. Let simmer until tender (~8-10 minutes).
  3. Put cauliflower into blender or food processor and blend until smooth or until it reaches your desired consistency.
  4. Mix potatoes, cauliflower, Greek yogurt and melted butter together until it reaches desired level of consistency.
  5. Season with curry powder and pepper, then top with green onion.

  3. I like how you mixed potatoes AND cauliflower…I’ve tried just mashed cauliflower and I liked it but the men in the house didn’t like it as much so I think I’ll try a combo of potatoes and cauli! I bought frozen purple cauli the other day….sooop retty!

    1. haha, that actually was more of an accident! I tried using just cauliflower but threw in too much greek yogurt (sigh), so I added in potatoes to balance it out. Maybe they’ll like this as a slow transition!? :P It’s definitely a super pretty vegetable!!
