German Potato Salad

Welcome to our weekly Foodie Friday link up, and happy World Kindness Day! I’m linking up with Annmarie from the Fit Foodie Mama, Esther from Chocolate Runner Girl + Jess from Hello To Fit to create awesome healthy recipes each week! Today’s theme = Veggie Surplus!

Hello, m’friends! I’m probably off at my 4th interview over the last 7 days right now, so please send some good thoughts my way if you’re reading this on actual-November-13th-2015! I’m where I did my Family Medicine + Sports Medicine rotations back in August!

I’m also doing a whole crap ton of driving this weekend, so if you could send good thoughts my way for the weather as well, I’d really appreciate it! I drove through a massive rainstorm to get to my interviews earlier this week, and they definitely weren’t a lot of fun (the driving, not the interviews–the interviews were a lot of fun!). If I could teleport, this wouldn’t be an issue, but alas!

As far as portions go, aim for ~1 potato/person (aka if you have 4 people, use 4 potatoes)!

German Potato Salad

Ingredients:

  • 6 red medium-sized potatoes, cubed
  • 1/2 cup yellow mustard
  • 1/4 cup Greek yogurt
  • 1/2 cup sweet pickle relish
  • 1/4 cup onions, diced
  • 1/2 cup celery, diced
  • 1 green pepper, diced
  • hardboiled eggs (optional)
  • salt (to taste)
  • freshly ground black pepper (to taste)
  • paprika (to taste)
  • garlic powder (to taste)

Instructions:

  1. Wash and boil potatoes, then cool and dice!
  2. Add potatoes and all other ingredients into a large bowl (or ginormous Ziploc bag if you’re on the run to a cookout). Mix well and serve! (This can be served hot or cold!)

    I have never thought about using yogurt in place of mayo! That is a great idea!
