Chocolate Chip-Stuffed Cookies ‘N’ Creme French Toast

Although I’m not usually a fan of super-sweet foods, I do tend to lean towards the sweeter side of the spectrum when it comes to breakfast options. Hence, when I saw this recipe (good ol’ fitocracy!), it pretty much had to happen. :O If you happen to have a food processor (or maybe even a blender would work; I just didn’t want to have to wash extra things), it’ll make the filling a lot smoother/more aesthetically pleasing. :P We made a couple of adaptations here and there; it’s definitely very versatile and customizable! :]

Chocolate Chip-Stuffed Cookies N Creme French Toast

Ingredients:

  • 2 slices whole wheat bread
  • 1 cup 2% lowfat small curd cottage cheese
  • 1 scoop MusclePharm Cookies ‘N’ Creme protein powder
  • 1 tsp vanilla extract -2 egg whites
  • 2 tbsp vanilla soy milk (or your choice of milk)
  • 2 tsp cinnamon
  • 2 tbsp Hershey’s semisweet chocolate chips
  • whipped cream (optional)

I didn’t want to waste the yolks, so we added a little more soy milk and made scrambled eggs for my plate!

Instructions:

  1. (Filling) Mix together cottage cheese, protein powder and vanilla extract until smooth. (Can be achieved with a blender/food processor.)
  2. (Batter) Whisk egg whites, soy milk and cinnamon until well incorporated.
  3. Spray a large skillet with non-stick cooking spray and heat over medium-high heat.
  4. Dip each side of bread in the egg batter, place in skillet and cook until golden brown.
  5. Spread the cottage cheese mixture over the slices of bread and make a stacked or open-face sandwich!

  4. What a fantastic idea! I love using cottage cheese in recipes but haven’t tried it with stuffed French toast.

    1. I actually used to hate cottage cheese, but it has such a nice protein content (vs. some other alternatives) that I figured I’d give it another try. I’m super glad I did! :D

    QUESTION: What can i use in place of the protein powder?

      I’m not sure if there’s anything that could really act as a direct substitute to the protein powder since it’s flavored and whatnot (other than maybe a flavored jello packet? :O ).

      But…texture-wise, it’s a powder, so maybe you can throw in some ground nuts, ground flaxseed meal, hemp seeds or chia seeds for extra nutrition? :]
