Chinese Parsley Soup

Fun fact! Cilantro is also known as Chinese parsley! I usually just use it as a topping of sorts, and haven’t ever tried it in soup before, but there’s a first for everything!

If you have OR6A2 (an olfactory-receptor gene that makes you extra-sensitive to aldehyde chemicals, which are found in soap…and cilantro…), you will probably have to skip this recipe, but for everyone else, read on!

It’s been really nice being near-ish to home again–my rotation (today’s actually my last day!) is only about 1-1.5 hours away, depending on traffic, so I’ve been going home on weekends to hang out with my family/friends–something I haven’t gotten to do on a regular basis in about 5 years. (Oh, grad+med school…)

My dad actually came up with this soup because my brother never drinks enough water but recently got scared because a friend of his got kidney stones and told him it was the most excruciating pain he’d ever felt in his life. Cilantro may have protective benefits for the kidneys, and has a high amount of dietary fiber, vitamin K (hello, blood clotting factors!) and vitamin A!

Chinese Parsley Soup

Fun fact! Chinese parsley is also known as cilantro! Check out this super easy recipe -- perfect for a cool fall/winter night!
Course: Soup
Cuisine: Asian, Chinese
Keyword: easy, healthy, quick

Ingredients

  • 2 bunches cilantro
  • 12.3 oz. tofu
  • 2 preserved duck eggs
  • 2 cans/cups low-sodium chicken broth
  • freshly ground black pepper to taste
  • drizzle of sesame oil

Instructions

  • Wash the cilantro thoroughly and cut them into two halves. Cut the tofu into cubes and dice the preserved duck eggs into small pieces.
  • Pour 2 cans of chicken broth into a pot and add cilantro + egg pieces. Pour just enough water to cover all the ingredients, then heat them up until boiling.
  • Add the tofu cubes into the soup and keep heating til it boils again. Add pepper to taste and a drizzle of sesame oil.

End-of-Week-ish Recap!

  7. I did not know that cilantro is also known as Chinese parsley! And it (thankfully!) does not taste like soap to me. I’ve never had preserved duck eggs before!

  16. I used to hate cilantro, but now I LOVE it! This soup looks so comforting. When I lived at home, we always have a side of soup similar to this.
