Bison Soup

Bison Soup

Ingredients:

  • 1 lb. ground, grass-fed bison
  • EVOO
  • 2 tbsp balsamic vinegar
  • 2 tbsp honey
  • 1/2 large onion, diced
  • 1 small can of tomato paste
  • 1 bag frozen vegetables
  • freshly ground black pepper, to taste
  • dash of sea salt
  • 4 cups water
  • 3 tbsp chicken essence
  • 2 bay leaves
  • 1 tsp smoked paprika

Instructions:

  1. Drizzle a little EVOO in a medium pan and add the ground bison, balsamic vinegar and honey. Lightly brown the meat.
  2. Add all ingredients into your crockpot. Stir to mix contents.
  3. Cook on low for 7-8 hours.

  5. I’ve never had bison! It looks and sounds really interesting though. I’m always looking for crockpot recipes! I’ll have to save this one!

  6. I have had bison burgers before, and used ground up with spaghetti squash! Looks like a great way to eat some bison! :)

    1. Yep, definitely! I think any other ground meat would work really well, and if you happen to be vegetarian, tofu or some other meat substitute would probably work just as well! :]
